We're at DL right now.
I'd looked back over years of archives for this site about "big and tall" enjoyment of Disneyland, and I was surprised about how few people were plain unable to ride the attractions. I'm 6'7" and 360lbs. Maybe I'm just a bit more huge than some of the other "Pooh sized" people out there, but I've run into a few snags here and there.
The remodeled Space Mountain: can't fit at all. There's no way in the new bucket seats to get the bar down over my legs. I have to "scissor" them to fit, but then the bar won't come down. Pretty disappointing, and it meant the wife had to take the kids separately.
California Screamin': Riding with my 6yr old, I could put one leg on his side of the car, and tuck my right leg down, but unfortunately it ground my leg against the "Sandpaper" traction strip and I ended up tearing open my knee. It was worth it, it's an awesome ride, but I need a knee-pad or something, and the blood was messy.
Mulholland Madness: Couldn't fit at all. Had to exit.
Indiana Jones: I can fit for the most part, but again have to scissor the legs to get into the car. I love this ride too, but spend most of it trying to use my arms to keep my knees from bashing the dash and the accessory basket. Painful but fun.
Autotopia: A tight tight fit. Was painful when I had one of the kids with me, but driving solo, I could pack my legs all over the place and make it work.
Tomorrow Land Rockets: Could not manage to get into that one either. Kids had to ride with Mama.
I think everything else is okay. Some things I have to be careful where I sit, usually the back or front of various rides will have extra room. The Cast Members have always been accommodating with putting me wherever I request it.
If anyone has any suggestions/stories about this subject, feel free to chime in. I'm the only person of unusual size in my family, so sometimes it's tough to sit and wait for them to go on a ride. At least DL can still be fun. I had a heck of a time at Universal Studios. (although at least they had sample cars outside the rides to spare people waiting in line only to find out they couldn't fit).

DBF is 67'3" and has some of the issues you mentioned, that's why he almost always wears pants, just in case his legs are too long. He fits on Space Mtn tho. I hope the rest of your trip was fun.
