60 Day Start

Hi everyone! There's a ton of threads on this, but I can't seem to find my question.

When will the 60 days start for me? For example, if I start my stay at POP Century on April 30th (no park this day), but I don't start my park hopper pass until May 1 - does my dining reservation window open on March 1 or March 2? Not sure if the calendar days start on my hotel stay day or the day I start my park reservations...
