You may be overthinking this. It is not 60+1, 60+2, etc. The term "60+10" is just used to describe the fact that you can make reservations for the length of your stay, up to 10 days. In your case, day 11 can be made 59 days before check-in.

My experience for longer stays has always been that, at 60 days out from check-in, I could make reservations for check-in day +10 more. So, in essence, 11 days. But if for some reason you're not able to make reservations for your last day at that time, as PP stated, you can make reservations for your last day at 59 days before check-in. Good luck!

You can make reservations a maximum of 70 days out. So if the first day of your trip is 60 days away, then yes you can book dining for your 11th day as of today.
