Why not just start at AK and hop over to Epcot when you get tired instead of Epcot to AK and back to Epcot again?

I agree. This is a long day, I would try and reduce your time in transit a little.
 
I agree with the other posters about Saturday, July 10. Either atart at Ak in am or stay in Epcot all day. AK is not a great afternoon park because it gets hot and crowded, the animals are less active, and there are fewer shows in the afternoon. PLus, with a breakfast at CMs at 8:30, you won't arrive at Epcot until 10:00 am at the earliest (probably closer to 10:30). If you're spending a few hours at Epcot you won't leave there until close to 2:00 pm. This means you'll get to AK at around 2:30-3:00, which is not a lot of time to do anything.

At your ages you may find you like many of the rides and attractions at Universal Studios and IOA. You may decide to spend two days here. Thursday, July 15 would be a good day to keep open to go back to Universal/IOA if you want. You currently have Fantasmic planned for that night. To keep that day flexible if you decide you want to do a second day at USF/IOA I'd go to Fantasmic on Tuesday, July 13. You still have Friday, July 16 in the am to go back to any park(s) and hit what you missed. You may even have time to hit DQ in the afternoon and do some shopping at DTD since you don't have to leave until 5:00 pm.

Other than that your plan looks great.
