504 plan meeting--advice, tips?

I'm really surprised (and concerned), that the AP thinks the gifted mess balances out ADHD. That's just crazy. Look into the term "twice exceptional" if you're receiving resistance. The nurse needs to be there per some laws. I've been a part of many IEP meetings as a teacher, and the nurse is always there.

I had a student last year who was gifted AND special ed.

Had somewhat the same issue with our principal in elementary school. Only advice I can offer is to keep two words handy...."Compliance Office". Those two words tend to make teachers and administrators shake in their boots as the CO can make their lives miserable if they come in to investigate issues with IEPs and 504 plans. Gather as much info as you can and good luck.
