How early should we check-in for a 5:30 AM Delta flight from MCO on a Sunday morning? We're staying at the MCO Hyatt so we're actually already there, but will the baggage counter really be open hours earlier?

If possible get your boarding passes online the night before. Then I would get there about 4:30am to check in. I would imagine some poor employee is there at that hour. :)
5:30 am? I had no idea the clock stopped there. ;)
 
As an unlucky soul who has done this, first find out what time DL opens. It won't take you long to do anything. (The airports are always empty at this hour!) So an hour would be PLENTY of time. (You may have to call DL to see what time they open!)
 
I would not get there much before 4:30, and lucky for you, that means leaving the hotel at 4:25!

I do not think you will encounter lines at DL, esp. on a Sunday (maybe Monday, with people trying to take that flt. and get back to work). My concern would be that they don't have enough TSA on duty to move the security lines well, but an hour should suffice even if.
 
I second the "call and ask them" advice. Several months after 9/11 my boss had a 6 AM local flight. The gospel then was "be there at least 2 hours before your flight, or else." She called the airline's local ticket counter and asked "Do I really need to be there at 4 AM?" They said "Well you can come then, but our first worker won't show up until 5:00!"
