If 10yoDD does the dolphin swim and I don't, can I at least do the orientation with her? Can I touch the dolphin, and/or get a pic with the dolphin? (I remember reading a post about a younger sib getting to touch the dolphin -- will they let a parent do it, too?)

Be sure the trainer knows you're there!

One thing which 'made my day' was when the trainer called back the photographer and videographer and allowed my DH and DD5 into the water for "family pictures" with the dolphin. DD5 was too young for the swim and really only wanted to 'pet' the dolphin. DH sat along the water's edge with her while I did my swim. The trainer saw me waving back to my family and asked if they were with me. She said they would take family photos for me. I WAS SO HAPPY! I got my photos and DD5 got to pet the dolphin. I can't say enough for their 'customer service'.
