If we do a mobile order for Docking Bay 7 Food and Cargo for pickup from 8:55PM-9:00PM and Hollywood Studios officially closes at 9:00PM, will we just have to take our food and eat it on the go or will we have time to sit down and eat it indoors over approximately half an hour or so?

You have time to eat. They will start moving people toward the front of the park by closing stores and attraction lines but remember everyone who is still in line for an attraction at 9 will be riding and then leaving so there will be plenty of people around. The QS staff will be cleaning to close but in my experience they tell you to enjoy your food and have plenty of other things to do while you eat. They wouldn’t offer that mobile order window if they didn’t expect people to use it
