3 weeks out - First stay at VGF and have questions

We are 3 weeks out, to the day, from our first stay at VGF. This is only our second trip as owners and our first stay was at BLT two years ago (went on short notice and that's all that was available). Anyway, We're very excited for this trip just for the fact this will be our first time staying in an "exclusive" resort.

My questions are, are there any must do's, must see's, don't do's, etc. that we should think about (specific to this resort)? Are there any hidden gems that we would need the super secret handshake for? We've been to Disney many times over the past 18 years and I still feel we haven't seen or used things to our full potential.

This year my wife and I will have a little more "adult" time. Our teenage son is bringing a friend this year and they will be able to do some things on their own, allowing us to have some time to do our own thing. Suggestions on what the adults can do, the teenagers can do and what we together can do would be greatly appreciated.
 
I think one thing to know is that monorail schedules continue to feature closures and late opens, as a result of ongoing work. Based on your dates, it seems like it might be near July 4? From July 1-4, they're likely to run a normal schedule, but if it's after that be aware of potential monorail disruptions. (You can't actually walk to Magic Kingdom from VGF.)

As grown-ups, you might enjoy Minzer's, or walking to the Poly along the path for Tambu Lounge or Trader Sam's.
 
Yes, 6/30 - 7/6. We'll take advantage of walking around since we both try to get some sort of exercise in, as if walking in the parks won't be enough!
 
We really enjoyed the Grand Floridian Café. Dined all over Epcot, and this hidden gem was our favorite meal. The salmon was wonderful.

2nd'ing the walk to Poly for Trader Sam's. My wife and I have done this, leaving the kids with either her mom or mine (or both in some cases). We're also a fan of Trader Sam's for drinks, Narcoossee's for dinner, then Top of the World for a few more drinks and fireworks. We also love the bar in Narcoossee's.

The big nuisance is that you can't walk to Magic Kingdom. You can see it... but you can't get there. Gotta take a back-up bus or the boat if monorail is on limited schedule.
