It will be almost 3 years since my last visit to WDW. On that visit, I went as part of a conference held at the Swan and brought my family. They went to the parks for 7 days and I got about 4 days in. I tried twice to get on Toy Story Mania but the fast passes were gone and the line was crazy long.
So my list of new attractions I know about that I'd like to check out this trip are:

1. Toy Story Mania
2. Refurbed Space Mountain
3. Michael Jackson's 3D movie
4. New British band in EPCOT
5. Star Tours
6. Kim Possibile
7. Refurbed Tiki Room - Not scheduled to be ready but I hope they hurry and are early.
8. Bay Lake Tower - Of course!

Is there anything else new in the last three years I should not miss?

Plus some subtle, yet effective, enhancements to the ride itself. Remember the ghosts that follow you home? I don't want to spoil it but they do a little more than that now.

POC has been updated to reflect the current film's release.

TS Midway Mania: Get there early and get a fast pass. The wait times are unbelievable.

The fireworks pre-show, "The Magic, the Memories, and You" is remarkable. The Imagineers have done an unbelieveable job. Best viewing is from the Main Street vantage point.

They have resurrected the "Main Street Electrical Parade" at MK.

There are two new restaurants in Epcot, "Via Napoli" in Italy and "La Hacienda de San Angel" across from the pyramid in Mexico. There is a Tequila Bar in the pyramid now!

The new band in Great Britain: The verdict is still out for us. They played ok but are were very loud when we were there which was a nuisance while trying to shop and communicate with the CMs in the stores while they were playing. I never thought I'd gripe about volume as I had a front row seat at a Jimi Hendrix concert and several Who concerts when I was a young adult and loved it then.

Our DD just loved Captain EO. We actually appreciated it more now than we did when it was originally shown.

anyway, TS Mania is great, as are all those mentioned! And the haunted mansion interactive area is so much fun-definitely worth it to go check out that direction instead of bypassing it.
 
I really like how they've enhanced some of our favorites like Pirates and Haunted Mansion. We love these rides and appreciate the improvements.
My wife has tried to spoil my surprise by showing me videos of new Castle effects. I run away so I can see it live first.
Really pleased with all these upgrades in last couple years as we wait for the big MK expansion.
 
Also, the queue for Winnie the Pooh has been completely overhauled. Even if you don't have small children it is nice to see the imagination!
 
This year, October 1st, is the 40th Anniversary of the opening of WDW. You can really see how they are gearing up for the countdown to the main event.
