Can it be frozen (to be used in baked items) at a later date?

How about sour cream? (For the same purpose..)

I've frozen cream cheese with good results, but I've never frozen sour cream. Seems too watery and I think it would separate. :confused3
 
I accidently froze some cream cheese before Thanksgiving and it really changed the consistency. I used it in a baked dip recipe. It tasted okay, but it seemed like it dehydrated.
 
Sour Cream when thawed will have the consistancy of cottage cheese. A quick whisking helps. Doesn't affect the taste.

Cream Cheese will also be runnier. But taste is fine. Still works for dips. Whisk it really good if going to use for cheesecake.
 

I've never seen it recommended. I've not been successful at freezing cheeses, unless they are grated (i.e. frozen lasagna).

What are you making that you want to make ahead? I'm making a chocolate cherry cheesecake for Christmas. I've bought the cream cheese. It can store for weeks in the fridge.

I'll be making some cookies - with both the cream cheese and the sour cream - sometime between now and Christmas.. The problem is, I can't go out to do my own grocery shopping and my son-in-law doesn't go "every" week, so I have to take it when I can get it..

Two other ingredients I will be needing are ricotta cheese and plain yogurt..

Do any/all of these items really go "bad" (in terms of baking) after their "expiration" date?

Yogurt needs to be used by the expiration date. Otherwise its really watery.

Cream Cheese gets a little moist but still kinda tastes the same

Sour Cream, changes, alot, and it's not that good anymore

If you buy cream cheese,sour cream,ricotta and yogurt they should all have expiration dates on them for more than 3 weeks away. Maybe not the yogurt but the others should.

I bought cream cheese recently and the expiration date is in May 2009. Sour cream is also in 2009. Look over what you buy and get the date that is furthest away. I have not had luck with freezing sour cream, never tried cream cheese.
