I'll be in Orlando in May. I want to do Universal and IOA in 1 day. I'll be a solo traveller and will not be doing any of the big roller coasters. Can I do a bit of everything in 1 day? Would it be beneficial to buy that extra line-skipping pass or do they have a lot of single rider lines?

You shouldn't have any issues especially if you're going to skip the coasters. Just make sure to arrive before opening so you can get going immediately. Also...make sure you have your park tickets in hand otherwise you are going to be standing in the long lines to purchase tickets.

I wouldn't buy the EP since you aren't doing everything. If you feel the lines are too long when you're here, you can purchase it then.

Fantastic, thanks! Can I purchase it when I'm inside the park or will I have to leave and go to a ticket window to get it?

The EP is sold throughout both parks so you won't have to leave and get it. There are signs outside the stores that sell it.

My adult daughter and I went back and forth between the two parks on our visit the end of August. We had three full days and each day we did both parks and accomplished so much each day and we are both thrill ride people. It's so easy to get between parks and if you plan well you can do everything you want to do in one day

I visited in October. I did a full day in each park, and park to park on the third day. Here's what I did on my park to park day (note, did not do the same attraction all of these times in succession, I left and went back):

- Disaster
- Forbidden Journey five times
- MIB about 5 times
- Mummy several times
- Simpsons about 5 times
- Dragon Challenge
- Flight of the Hippogriff
- Jaws
- Ripsaw Falls
- Jurassic Park
- Hogwarts Frog Chorus performance
- lunch and snacks in the parks
- Hogwarts castle tour
- souvenir purchases
- and about 30 minutes of wandering around and taking photos in each park

I suspect there will be more crowds in May then the day I was there, but you should still have time to do quite a few things, especially if you arrive at opening and stay until closing. If you decide the lines are too long when you get there, then you can buy an Express pass. Don't buy it in advance.

Mummy, Forbidden Journey, MIB, and maybe Spiderman? have single rider lines. Several of the big coasters do too, but you said you wouldn't be riding those.
