2 Days in WDW...what would you do?

Husband has a business trip to Orlando in April and we are planning to do two weekend days at Disney with our adult daughter. Have been there many times before. One day will be Drinking/Snacking around Epcot...what would you do for the other day? Last time we were there was 2014.
 
I would have to agree with everyone else. I'm betting that you'd get lots of debate between the other parks if you were doing MK and then looking for suggestions for the second day. I'd agree with siskaren that it wouldn't be a WDW trip for us if we didn't make it to the MK.
 

I also agree - I only had two days in WDW on my last trip (with work friends, so adults only) and we did MK and Epcot.
 
Honestly? It depends. For my husband and I, it would be Hollywood Studios, since we love Star Wars, plus Indiana Jones, Muppets 3D, Great Movie Ride, Fantasmic, TSMM, I would do RnRRc etc...
 
For most people, including me, MK would be the option. Unless you haven't seen one of the other parks in years and years or if all the Fastpasses and dining reservations are all gone for the things you really like at the MK.
 
Oooh...maybe it is time to do one of those backstage tours at MK! Have always wanted to do one of those.
 
Personally, if it were me, I would plan to do only half a day at Epcot in the evening if you just plan to eat around world showcase. My plan would be a full day at MK, then the second day would be morning at Hollywood Studios and then take the boat from Hollywood studios over for an evening at Epcot
 
MK one day, Epcot the other. And I would add a monorail pub crawl to the Epcot day.
 
Will you have park hoppers? If so, I'd do a morning and lunch in MK, then hop over to Epcot. On the second day, I'd go to HS and then hop again back to Epcot.
 
I think I am in the minority here. But my choice would be either HS or AK.
Hollywood Studios - if we felt like pushing ourselves to do all the fun stuff
Animal Kingdom - if we wanted a more relaxing day of wandering and looking at animals
 
MK one day, Epcot the other. And I would add a monorail pub crawl to the Epcot day.

To be honest, this is my easy-peasy plan. If I would be given free reign for my optimal plan, I would find a way to fit all 4 parks in:

Day 1:

AK in the morning, then MK for afternoon and night- especially if they had EMH at night.

Day 2:

Studios in the Morning, then over to Epcot for the rest of the day/evening. Nightcap at each stop on the Monorail.
