2 Days in Disney Oh My!!

so tell me WHAT are some things you wouldn't want to miss when going to WDW???

We are planning on going presidents week in Feb and only doing 2 days,,we are going to the keys as well and well I plan on doing a WDW trip later on when my youngest is old enough

i have 2 children, 7yo girl and 2yo boy,,my girl isn't really into the princesses anymore, but hannah montana and high school musical and cheetah girls,,my boy well he like mickey mouse clubhouse,,i'm still figuring out WHICH character he likes,,lol,
i plan on chef mickeys and we'll do MK one day and i really think we need to do epcot,,we didn't do soarin last time we were there but my daughter loves the simulators,,she is a big ride buff,,a friend or two said AK but i'm not sure,,i'm not so worried about my 2yo ,,more for my 7yo since we'll be splitting up we figure since our 2yo won't be able to do most of what my 7yo can and for me,its more for my 7yo since my 2yo won't remember anything,,

we will probably stay off site since we did that 2yrs ago and it wasnt too bad,,i've heard stories about waits for buses being a LONG time and i'm not into that,,when we wanted to go home we left and didn't have to wait!! i like that!!! when we come back for our week trip in the future we'll be onsite but for 2-03 days i can't see it,,

anways,,i'm here looking for ANY advice you all can give me and i thank you GREATLY for it!!!
