I need to book one later this year. What is the difference between the lock-off and the normal 2 BR?? I want us all to be in one room - one entrance.

Lock-off = 1BR + Studio so it would not meet your needs since it would have 2 separate entrances.

Wouldn't the interior door be unlocked to allow free flow from studio to 1 BR and vice versa?

Depending on who is going, I think the lock-off is preferred for more privacy and the added sitting area and kitchenette.

If there are children, a dedicated is usually preferred so that they don't have an entrance to the hallway from the second bedroom. Plus, depending on the resort, most 2 bedroom dedicateds have 2 queens in the second bedroom vs a queen and a sofabed in a lockoff (except OKW).

We stayed at SSR in a dedicated 2br/2bath it had one entrance. There was a little foyer area which was nice, just to put the stroller (folded) there. The dedicated also had 2 queen beds in the second bedroom which was really nice.
