Welcome to the DIS! You will find a lot of help here, but I also highly recommend you get The Unofficial Guide to Walt Disney World to make sure you have all of your bases covered and get the most for your money. This is one trip that you really need all the advanced planning you can get.
Now to answer your question. Yes you can return to the same park in the evening, but we prefer to mix it up a bit and do one park in the morning from Park opening to about 1pm, then take pool/nap break back at our resort and then return in the evening at another park. We do the park hoppers mainly because we don't like to spend as much time at MGM and AK, so we can get in a lot more visits to MK and Epcot during our week.

I highly recommend staying on site at a Disney Resort if possible. It makes trips back for a rest and pool break so much easier.

Also check out www.mousesavers.com for discounts on Disney resorts. They just released Annual Passholder discounts for late spring/early summer stays. They should be releasing general public codes soon. If not then AAA is a good way to go. I would go ahead and book with the AAA discount and watch mousesavers to see if they come out with anything better, and if so you can have the new discount applied to your current reservation.

AAA is helpful! For the moderate resorts we've stayed at Carribbean Beach and LOVED it, it is our "home" we have also stayed at Port Orleans French Quarter which was great, has an AWESOME slide and is a nice small resort which may work better with kids! If you are military and looking for an inexpensive "deluxe" resort try out Shades of Green.
OH if you stay at either CBR or POFQ make sure you take advantage of the food court it helps save $ and they have good food!
