In regards to your question about what specific building to stay in...
Some people prefer to stay as close to the food court and pool as possible. This is totally understandable, as it's a big resort and fairly spread out. But I liked staying a little farther away. It forced me to enjoy the resort more. Although it means more walking (with our 3 and 1 year old!) it also meant seeing more of a really beautiful place.
We stayed in Oak Manor this last time. It was very quiet but only about 5 minutes to either Fulton's Gift Shop over one bridge or the pool and food court over the other.
And take advantage especially of the boat ride either to Downtown Disney or the French Quarter. We did both - actually, we took the boat to the French Quarter one night for dinner, and their food court was much, much less busy and the food was as good or better. Then we took the boat to Downtown Disney - this was in the evening - and I think it's one of the best ways to get around. Much better than a bus!
