Definatly see Festival of the Lion King.
That's my favorite show in AK, and maybe in WDW.
I'll agree with a bunch of the above posts, skip Tough to Be A Bug, (unless your kids really like bugs,) and Dinosuar. Though I did ride with an 8 year old who was fine on both, but I was a teenager, and hated both.
Also, unless your kids are huge Pocahontas fans, I'd skip that show to, as it is rather boring, and no where near as good as other Disney shows.
And of course there's character greeting, though the only place I've ever seen characters is at Camp Minnie Mickey, and then it was Flik, King Louie, and I think Rafiki, in addition to the fab five.

. She came running back to her seat with the biggest smile on her face. And of course the video camera was tucked safely in its case.
