Passing on my Disney obsession to my 3 kids, and a

Passed the half a year mark today, which means ADRs on Saturday. As DVC members, I've already booked an SSR treehouse from March 24th to the 31st, then we set sail on the Dream until April 4th.
Here's the plan so far:
Day 1: Downtown Disney
We'll be flying in the morning, getting in early afternoon. Since we're staying at the treehouses in SSR, I thought a walk around DTD would be good.
Lunch: SOMEWHERE downtown (suggestions appreciated)
Dinner: BBQ at the treehouse
Day 2: Magic Kingdom
We always do Magic Kingdom the first and last full day visiting. The first day ALWAYS starts with Dumbo, then the pixies, then the rest of Fantasyland, Toontown and Tomorrowland. (aka East side of the kingdom).
Lunch: Cosmic Rays
Dinner: Crystal Palace. Jessica is Pooh bear crazy.
Day 3: Epcot
My 45th birthday!! Start of with Soarin (of course), then whatever tickles our fancy. The only other MUST ride is Figment. Kim Possible as well.
Lunch: Sunshine Seasons
Dinner: Le Cellier (I know, I know, 2 DDP credits, but it's my birthday dang it).
Day 4: Hollywood Studios:
Toy Story mania, Great Movie Ride and the "draw with an animator" are our faves.
Lunch: Backlot Express
Dinner: 50's Prime Time (hopefully with Fantasmic package).
Day 5: Epcot
Whatever wasn't done on Epcot Day 1. Another Kim Possible adventure or two.
Lunch: Whatever country we're in (suggestions for counter service appreciated)
Dinner: Ohanas Trying new places each trip, and haven't been here yet.
Day 6: Animal Kingdom
Brendan's 11th birthday. He LOVED starting at Kali river rapids last trip, pending March weather. Other likes are the Lion King show, the safari, Everest and a few water gun games.
Lunch: Flame Tree BBQ
Dinner: T-Rex (not on dining plan, but it's Brendan's birthday)
Day 7: Magic Kingdom
Day 2 at MK ALWAYS starts at Pirates, then we do the West side of MK. Big Thunder and Splash Mountain of course.
Lunch: Pecos Bill
Dinner: Hoop De Doo Aagin, never tried it, but sounds like fun.
Day 8: The Dream
Say goodbye to my parents, then the 4 of us head over to our first ever cruise on The Dream
My main concern is my Mom. I love her to death, buy she drives me f%&%ing nuts. In addition to being celiac and lactose intolerant, which greatly diminishes the food choices (of course through no fault of her own), she flat out refuses to try any new foods (for example, she's 67 and tried a kiwi for the first time a month ago). Add to that she's freaking cheap
, as in bring your own cheese slice to McDonald's to avoid paying the extra 40 cents for the cheeseburger cheap. I've bought her nice things in the past, and she didn't like them because she got so worked up over their costs (even though she didn't pay for them), and I don't want her to miss out on the fun we have at WDW. (Plus I don't want to be charged with manslaughter if she "starts in" on me about the costs.)
Any advice would be greatly appreciated as to how to "educate" my Mom for the trip to avoid embarrassment and frustration. For her eating issues, I've already printed out a list of foods she can have that was sent to me from Disney. I just want my Mom stop worrying and enjoy the trip.
