We have a split stay. 4 nights on site then 4 nights off site. At my 180 day mark for onsite will I be able to make ADRs for the offsite days at that time too?

No. It is 180 days + the length of your stay at a Disney resort through the check out day. Once you move offsite you will have to make the reservations one day at a time 180 days before you want to dine or wait until your last day falls within the 180 days and you can make them all at once.
