Whenever we drop off people at MCO or TIA, we always park in the short-term garage. You will have plenty of time to accompany your DD in as far as the security gate. The first 40 minutes are free (first hour free at TIA). That is usually enough time. At most we have paid $1 for an additional 20 minutes when there was a long security line.
 
I agree park at the short term garage. I don't think you could confirm with any certainty which nights the security lines would be shorter.
 

Getting a bite to eat in the airport will reduce the chances from fair to very poor you will get the car back to the lot exit booth within 40 minutes.

Remember, once the 40 minutes starts ticking, you have to first find a space, and then walk to the ramps leading to the terminal. How much does it cost if you get to the exit booth 64 minutes from when you first entered?

My advice, get lunch before you get to the airport. Unless parking fees don't bother you.
 
On one Saturday night in September, for a 7:55 flight (for which Magical Express scheduled me for a 4:45 pick-up, but that's a rant for another thread ;)), the security "lines" in terminal A were four people long, tops.
