So I am I right that I can just email my requests to DCL.Concierge.Services@disneycruise.com? What time should I send it? Right at 12:00am, or just when I get up in the morning, or some other time?

Do it right at 12am because it's first come, first served.

Yep yep. I sent mine at 9pm the day before my 125-day milestone. West Coast here so that was midnight EST on the 125th day. They concierge staff will then go through the emails in the order in which they were received and set calendar reminders to book (in the order received) the things you and others staying concierge have requested for their cruise. The process is pretty painless and just awesome imho.
