please turn this in to dinner for me. I am fighting a horrible cold and don't have much energy. I was thinking meatloaf but is 85% too fatty? What else could I do that is easy? we are not big spaghetti eaters, maybe an American chop suey, I've never tried that! I just don't have the $ or energy to hit the supermarket after work!

I always use 85% on my meatloafs.. and turns out fine, not too fatty.

Could always do something like a shepherd's pie also.. if you have potatoes.

Or what about hamburger stew (might be same as your chop suey you mentioned, never heard of that).. veggies, taters, ground hamburger.
 
Depends on how easy, but my 3 recommendations are:

1) Hamburger Helper - my son LOVES this stuff (cheeseburg macaroni)

2) Add some taco seasoning to the hamburg for taco night

3) Add 2 packages of brown gravy mix (w/ water) and top mashed potatoes with it (another favorite of son). Serve with corn.

Just thought of another.... add spaghetti sauce to it and serve over pasta for an easy meat sauce.
 
It's not too fatty for meatloaf.

Here is a tip I learned somewhere years ago. Don't cook in a loaf pan. Just shape the meat into a loaf and bake it on a broiler pan with foil under the meat. Use a toothpick or skewer to poke 10 or so holes where the loaf will rest. The fat all drains into the pan as it cooks and you won't have a greasy meatloaf.

You don't have to adjust temps or cooking time either.

Not knowing what else you have at home...

How about just molding them into patties (add some seasoning for flavor, or brushing with BBQ sauce) and cooking them on a George Foreman type indoor grill (if you are concerned about the fat, those tend to drain the fat away).

Combine with a bun and slice of cheese, throw some baked potatoes in the microwave, heat up a can of corn or BBQ beans and open a bagged salad.

Should be about 5 mins prep time and maybe 10-15 mins cook time.
 
thank you all for your quick responses. It sounds like it will be just fine for meatloaf. I love the idea of the broiler pan and foil, I think I will try that. I suppose I am craving comfort food. I have some potatoes and I saw some recipes in cooking light for microwave mashed potatoes so maybe I'll try them to.

Go for the chop suey. Cook up the burger, cook elbow mac. Drain both, mix them together and add tomato sauce of some kind. Wicked easy.
 
My vote is for sloppy joes. Even if you don't have the Manwich, you can make it w/ a bottle of bbq sauce.
 
85% is perfect for meatloaf. In fact if all I have is 90% or leaner, I'll add olive or canola oil to the beef mixture to increase the moisture, otherwise it comes out too dry.

Ketchup, worchestershire sauce, and some chili powder. We'd never ruin sloppy joes by using Manwich or bottled bbq sauce.
 
Modified Shepard's Pie

Cook ground beef with a small amount of minced onion (can be fresh or dried). Drain, put in small casserole dish - drain and spoon on half a can of corn, top with instant mash and grated cheddar cheese. Bake at 350 until cheese is melted.
