Ann -- Babies change so fast. Your story made me smile too. Is Emma smiling yet? I'm sorry your DH got called in all weekend. That stinks.

Kathy -- You know you'll have to put a meal with me and Beck on your itinerary if you ever do an East Coast tour.

I had dinner with my parents this afternoon. We had grilled swordfish with a garlic/mustard sauce, Mom's eggplant sticks (I forget who asked for the recipe recently, but I didn't see the post in time...sorry!), green beans, and a rice dish that had mushrooms in it.
 
Hi Friends!

Tonight is the staff party welcoming the new pastor so I'm bringing a dish. I tried in vain to find this kickin' quinoa recipe I used not too long ago but after digging through magazines, websites, and emails I can't find it. So, I'm making a quinoa and black bean dish that got great reviews on All Recipes. Smells yummy! It's more less potluck so we'll see what everyone else brings.
 
Aimee, I have never tried or made quinoa!! It is similar to a lentil or barley right???

Kat- I would love it if you came up to our neck of the woods! New England is lovely, even though we are all complaining right now. Fall :goodvibes There is a wine train in the Litchfield Hills that I would love to go on. I hear it si so much fun and the area is gorgeous! And don't even ask about our beaches! every NE State has different beaches. Some are calm, some are big, cold and have huge waves, and when you get up to Maine.....the beaches are wild and rocky. They all are beautiful!

Now I have a huge problem. I bought some lovely sockeye salmon at Costco. The date is a few days out. I also have pork chops marinating. I have no idea which I need to cook tomorrow. Or do I need to cook both? I hate to do that. Help?

That sounds lovely, we're thinking fall 2010!

I would think the marinating chops would last another day so I'd do the salmon first.:confused3

Anyone looking for something a bit different to do with sweet potatoes, came out really good:

Scallion Sweet Potatoes

Combine 1 1/2 lbs chopped peeled sweet potatoes, 1 bunch scallions, cut into 1 inch pieces, 6 crushed garlic cloves and 1 Tbsp fresh thyme in a bowl. Drizzle with 1/4 c. EVOO and season with salt & pepper and toss. Place in a sheet of foil and fold up. Grill over low heat until the potatoes are tender, 20 to 25 minutes.

Ann- quinoa is a seed but it is treated like a whole grain. As you cook it it expands and becomes fluffy, it seems to take on the taste of whatever you season it with. It is considered a complete food, it is loaded with protein. I add it to soup, use it in place of rice under a chili or stew, as a starch and as a filler in casseroles.

Laura- be careful with that invitatio....Marisa and I are gate crashers and woul be groveling on your doorstep if the two of you are cooking:cool1::cool1::cool1:
 
Hey guys, So sorry I have not been posting lately...summer and the boys have kept me pretty busy. I do lurk though.

Tom went to a class this weekend so he has been gone since yesterday morning. I pretty much cleaned all day and then Andrew had a friend over. I made them Velvet Shrimp and they both went back for huge 2nd servings. Andrew's friend is diabetic so I try to cook low carb when he is over. I used Dreamfield pasta.

Andrew went down the shore with my sister for a few days today. When I got back from dropping him off, I made marinara sauce from some nice plum tomatoes that I bought. That is what I just had for dinner.

Thomas is now exercising his vocal cords screaming...ahhhhhh! ahhhhhh! Too cute.

Kathy, Not sure about the Blue Zoo signature dining...that is not what we were planning. I guess we have to look into it. DO you have any details? TIA

Why is the Bluezoo dinner going to be at DD?! We would have done it, but not being sure of the venue? I don't know. I think we're going to go with the FF signature dinner on the 15th.


edit: I just read on the F&W thread that someone's contact said the Bluezoo dinner would be held at Bluezoo not DD. Who knows? I wish Disney would hurry up & come out with the official event schedule!
 
I just discovered quinoa a month or two ago and LOVE it. It's very healthy, high in protein and tastes delicious. Easy to cook, too!

This is what I made tonight - got rave reviews and it was all gone by the end of the buffet line.

Quinoa and Black Beans

Prep Time: 15 Minutes
Cook Time: 35 Minutes
Ready In: 50 Minutes
Servings: 10

Ingredients:
1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels
2 (15 ounce) cans black beans, rinsed and drained
1/2 cup chopped fresh cilantro

Directions:
1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.


My changes: I used canned corn I had on hand, just 1 can of black beans, and threw in a can of Rotel tomatos (with green chilis'). Those changes were based on reviews on All Recipes. Oh - and I used chicken broth because it's what I had.

Like Nan said, it is a grain and (don't read this Bethany) :rolleyes1 it had two varieties, the regular and a red. I like the red better, it has a better texture to me. I made it once with mushrooms and spinach, just cooked it all in the liquid together.

Busy weekend and I took a nap today so I am still awake although I am starting to get sleepy. Had my all day festival Saturday, it was great. Beautiful weather and lots of people came out.

I made a Kahlua cake for it, will have to post the recipe, it was soooooo good. I actually got two recipes online and put them together.

Dinner changed a bit tonight....I made shrimp cocktail & grilled the marinaded tuna & grouper. We had white Jersey corn & polenta that I mixed (a little) butter, grated cheese & fresh basil into.

Kathy, Thanks for the link to the F&W info. I guess we have to figure out what will happened with out ADR if the event is at the restaurant. Remember, when you do your trip, you have to start or end in NYC to see me.

Laura, I hope Greg has safe travels to Germany. How long will he be there? Is a trip in order for you?

Tom is home sick today (lucky me ;)). I guess he had too much fun this weekend but he came home with a horrible sore throat. He may go to the doctor.

We are starting WW today (on our own). Dinner will be grilled porterhouse with a tossed salad. Porterhouse is our new favorite cut. I never bought it until about a month ago and it is so good. How could you go wrong with a filet and strip in one steak? Of course with Sandy's rub...that stuff is like crack! So freakin good. If you have not tried it, you should. THE BEST!

Andrew is down the shore so I need to get some stuff done while he is gone. I will get on the treadmill in a few minutes, then start that crap. Gosh, I wish I could justify a cleaning lady...but I guess the clutter would still be here, right?

My SIL (Luke's godmother and my maid of honor) was admitted to the hospital overnight with severe arm pain. Please keep her in your prayers today. They are running test but no answers yet.

I may have my niece and nephew today, waiting for DB to know what plan is.

Ann- quinoa is really good but Dh avoids it as well. Lauren- we are not crazy about the red quinoa but I wonder if I just managed to cook it wrong.

Dinner is salmon, I think I am going to look for Alton Browns method, it looked like a great way to cook a large piece of fish without trying to turn it. I bought extra so I can have the left overs for salads.. I hoep that there is some left, I never set food aside for another meal so if it goes it goes. Buddy loves fish so it is hit or miss for leftovers

Serving curried sweet potatoes and brocolli alonge with a cucumber and onion salad.

We are going to pick blueberries when Marisa gets home :woohoo:
