The What's For Dinner Thread - May '09(recipe index in OP)

...All this talk about pot roast has me craving it...but DH considers that a winter meal!

...a lot of people consider that 'winter' food....I guess because it's a type of 'comfort' food too....now I"M in the mood for pot roast too - I make mine with potato pancakes though....YUM-o!

Last night we had chicken broccoli stiry fry with brown rice.

I have to find something to do with my lone zucchini. It is the size of a small baseball bat. I didn't check the plant before cause I thought I didn't have any....

...when I only get one or two zucchini's in my garden, I slice sausage into 'coins', saute` them with 2 cloves of crushed garlic, a small diced onion, and olive oil. I add two small cans of tomato sauce (usually Contadina) and let it simmer for about 20 minutes. Then I remove the zucchini skin and cube it and add the zucchini cubes to the mixture. Stir and sprinkle parmesan cheese over the top. Cover and continue cooking on a low flame for another 20-25 minutes....then I serve it over white rice or pasta!
 
We had a blast! I'm anal when it comes to grocery shopping, I have my list according to aisle # and I had to send poor Bethany back to aisle 6 at least three times...:rotfl2: I'm telling y'all the girl knows how to bargain shop, she knows what's on sale everywhere!!!:thumbsup2

Nan, I'm trying to let everyone take care of me, but gosh it's hard. I started to unload the dishwasher today, Chris fussed at me & I told her it was easy. Then I tried to empty the bottom rack & had to admit I couldn't do it, my neck hurt when I bent over! :guilty: So I have no choice but to let them all help. But they have to stop trying to feed me! I'm going to be as big as a house before I'm well! Angelina had made those brownies, then Chris brought chocolate filled eclairs ( my absolute fav) & fruit tarts. Plus she brought a lunch of shrimp pasta! I'm not going to be able to fit through the door if this keeps up! :laughing:


Enjoy it while you can. Not a great reason to be pampered but it is probably the last time for this kind of spoiling in a long time! You'll work the eclairs off later!

Kimmar- I think that the key to pot roast is the browning on all sides before braising. Then make sure that whatever you use for a marinade is really flavorful. I tend to use a little more than whatever the recipe calls for, but that is just becasue I cannot leave a perfectly good recipe alone. After teh roast is cooked. remove the meat and veggie adn reduce the liquid before you thicken it for the gravy. Add the cooked meat and veggies back in and let simmer a little while.

I do this for most pot roasts I cook, it takes a little longer but the results are well worth it. The potatoes carrots and onions, (I also use rutabage in most pot roasts) absorb some of the gravy and are also coated so they are really good. The meat stays moist.

The Carnival was really crowded last night. I think that a lot of people turned out to support the firefighters, I hope that they can make up some of what they lost in the first two nights. My dinner was fried dough. and more fried dough. And everyone else's leftover fried dough.
Jeff made passion fruit mojitos and we had them while watching the parade. Oh my! They were good!

I have pork chops marinating in a jarred cuban marinade. I am also going to try our VIP martinis today, the pineapple infusion was for ten days so I took care of that yesterday. I have some Nuvo in the fridge too as a backup :thumbsup2

The only thing I have a recipe for is the bruschetta. The tuna was just seared and I had gotten the mango wasabi sauce from Omaha steaks and just turned it into a dressing. Here's a link to the bruschetta:

WFD - Pork roast in the crockpot, grilled scallion sweet potatoes and green beans.

I got all of my ADR's today and added Brown Derby (never been) for lunch!!!
 
Janice- I meant to tell you that I grate my squash, saute the water out and add it to red sauce. You can also slice and quarter them and add green or yellow squash to res sauce. If you freeze the sauce the squash does not mush up, but I cannot tell you why not.

....when I make mine, the meat always comes out very tender - that's not the problem. It just tastes like there is some secret ingredient that is missing to give it that 'traditional' pot roast flavor.....:confused3
 


Ann Pot roast is not for just for winter. We had chili the other night.:confused3 I thought Alex was crazy cause he wanted it.

I know ...my man and his thinking, summer = burgers every night!:confused3
His list of winter meals...meatloaf, shepards pie, chicken pot pie, pot roast, etc...you get the idea.

See why I get bored with cooking sometimes, and I love to cook.

I am in the middle of a house purging. It usually happens when I am looking for something lost. Now my compute desk looks bare but I still can't find that darned paper.

I am craving swiss steak,or beef stroganoff...winter meals too!!! I love him, but sometimes he drives me crazy and there is no freezer space available.

Yeah, he just got called in again...another weekend shot. Hoping this will be a short call.

My little ones are great, thanks. Luke is obsessed with these minature Thomas trains right now. He is so funny, he asked to call Grammy to talk about trains...he is always asking to go to Target now because he knows that is who has them. I just fed Emma, she is sleeping next to me in her seat. I just can't stop myself from kissing those cheeks! She goes back to Dr on Thursday for a weight check. She is already changing. Last night DS was laying on the floor next to her and she was waving her hands and legs with excitement. It was so darn cute, DS got a real kick out of it.

We just went out for a brief ride and DH got another work call. He dropped us off at home and headed out again. Ugh.......

Kimmar- are you using enough salt? Anything that is braised takes up more salt so soy sauce, Worcestershire sauce, beef flavor base, onion soup packets....anything that your family can have might just solve the problem

Ann- :cloud9: just picturing your babies. Have you brought Luke to Barnes and Noble? There is a Thomas the Train set in the children's section. Kady loved to play there. I think the draw actually helped to foster her love of books.

Maria- Pplease let us know wha tthe Dr says. Maybe you need a stronger antibiotic or one that is given for a longer period of time.

Kat- I would love it if you came up to our neck of the woods! New England is lovely, even though we are all complaining right now. Fall :goodvibes There is a wine train in the Litchfield Hills that I would love to go on. I hear it si so much fun and the area is gorgeous! And don't even ask about our beaches! every NE State has different beaches. Some are calm, some are big, cold and have huge waves, and when you get up to Maine.....the beaches are wild and rocky. They all are beautiful!

Okay, so dinner got canceled. Well not really. I ran errands, shopped and just lost the day. I also bought Buddy sandwich meat and club rolls and half sour pickles. Yup, I am having a test drive of the VIP which is delicious! and he is having his favorite supper :thumbsup2

Now I have a huge problem. I bought some lovely sockeye salmon at Costco. The date is a few days out. I also have pork chops marinating. I have no idea which I need to cook tomorrow. Or do I need to cook both? I hate to do that. Help?
