So my carb free thing went down the drain last night becasue we had a last minute dinner guest. I made polynesian chicken, Isreali couscous, string bean medley and corn and stuffing for Buddy. He refuses to eat couscous.

The chicken is really easy.

Combine 1 can whole berry cranberry sauce with about the same amount of Catalina French dressing and one package French onion soup mix. Reduce it some on the stovetop and pour it over chicken. Bake for about 30 minutes.

You can use whatever chicken you want. I used BL/SL chicken breast last night but if you are using cut up chicken I would season it and roast it off in a hot oven to render the fat. The pour it off and top with the sauce and use it as a glaze. Oh, so good. So easy and so not good for you!

I was in a hurry because I was just going to have salad and chicken so the couscous was simply browned in a hot pan and then added to hot chicken stock and another package of onion soup mix before simmering for about 7 minutes. It was tasty but really is better with fresh diced veggies.
 
We are having a bake sake at work next Wednesday to raise money for our Military Kids, it gives them scholarships to summer camps, or tutoring what every they might need to advance themselves.

Problem is I have no idea what to bake.

I need to be able to portion it in a size that can sell for a dollar.

David wants me to make Oatmeal Raisin Pecan cookies, so he can have a few and then they leave the house.

I just don't have a really good recipe for them, do any of you?
 
Late, but last night we had crab sauteed with onion , mushroom, and jalapeno, with poached eggs on top. Sounds and looks odd, but its yummy!
I like it better with poblano peppers. The jalapenos are a touch spicy for me - at least with the amount DH puts in.

I think that the best one is the recipe on the Quaker Oats box. It is the only one that I use. You can portion the cookie batter and add chocolate chips or chocolate covered raisins or dried cranberries and nuts with some orange zest or butterscotch chips or ....on and on and on!

ok for some reason this is really making me hungry this morning...

I thought it was time for some food porn. This is one of my most recent creations as I had it at Catal in DTD. A lamburger with Feta, lettuce, red onion, roasted red peppers and mayo. Now they serve it with a fancy Aoili, but I just ust plain old mayo.

I have also started mixing the feta into the lamb and it is much easier to eat!

So dinner yesterday was too much Chili and too much beer!

Tonight is Beef and Barley soup, will start making it shortly!
 
Home to reality yesterday.

Dinner was pasta with marinara sauce....heat and serve. I really need to get back to cooking from scratch.
