Eat at Home 3!

Last night: Linguine w/ clam sauce (got 5 lbs of fresh clams--soooo good), salad, fresh pineapple
Tonight: individual chicken pot pies
Tomorrow: Carbonnada (Belgian beef stew w/ onions and beer), Brussels sprouts roasted w/ bacon
Wed-Saturday: I am going to the coast with my best friend and letting the kids fend for themselves!! What will they do? My guess is frozen pizza and/or McDonalds

I have been gone for WAY too long and my wallet (and scale) are showing the results... and they are NOT good. I have been working 3 jobs, 2 of which have very random hours, and have been having some medical issues of late so most weeks I also have multiple doctor's appointments (from PT to psych to my PCP to specialists). Thus my plans have just not been doable. But for March I am refocusing on saving money and getting healthier which means getting back to the basics such as eating at home. I cleaned out and organized my freezer and pantry so I knew what I had. Then I made my monthly meal list based off of that and yesterday I did my big shop for the month. So I should be all ready to go!

Here is my list starting on Monday:
Monday: Turkey, stuffing, green bean casserole, and gravy
Tuesday: Leftovers
Wednesday: Tilapia with crab stuffing, wild rice, and roasted brussels sprouts
Thursday: Slow cooker creamy Italian chicken over rice
Friday: Leftovers
Saturday: Leftovers
Sunday: Sesame chicken, rice, and broccoli

Friday: Open Faced Burgers
Saturday: Spicy Shrimp Tomato Pasta
 
I have been working crazy hours and not doing well at eating at home. We finally hired more people so my hours are back to normal.

Last night we had beef stew over noodles
Tonight we had hamburgers with tater tots and fruit
Tomorrow I work late so mom is having shrimp fettuchine and I will be having hot dogs and chips with fruit at work.
Wednesday will be chicken and pasta with roasted tomato sauce
Thursday will be chicken enchiladas
Friday will be french toast bake with sausage and fruit
Saturday will be baby back ribs with brussel sprouts, roasted sweet potatoes, and salad
 


Monday - green eggs and ham and cheese frittata (Dr Seuss's b-day) pancakes, hash browns

Tuesday - bruschetta chicken, mashed potatoes,

Wednesday - taco bake casserole

Thursday - baked ziti, garlic bread, salad

Friday - hot dogs, baked mac and cheese

Saturday - country club chicken

Sunday - London broil, risotto, sautéed spinach
 
I too have been gone as it was crazy in weeks leading up to Chili Cookoff (large charity event for Boys&Girls club and other children's charities)-even though it snowed ALL day preliminary reports show may be one of our best ever!! Kiddos in our area will be the recipients!

Monday-freezer scramble (whatever was left in freezer LOL-I actually save/freeze quite a bit so leftovers don't hang in fridge forever)
Tuesday-Crockpot fajitas
Wednesday - Chili (didn't get to sample much saturday!)
Thursday/Friday/Saturday/sunday-leftovers, mac n cheese, lasagne-in no particular order:)

Fri: Dinner at my Grandmothers.. Making Chocolate Quick bread to take over
Sat: Salmon on Croute ( first time making this!)
Sun: Ham, potatoes, and cheese in the crockpot
Mon: Brinner..Pineapple Macadamia nut pancakes.. (mhhhhhh KONA!)
Tue: Chicken Parm Soup
 
I've been planning and cooking ,but not posting. Last week was crazy busy and I did end up going to Sonic and grabbing junk for all of us one evening.

Last night we had Beef Stew, stuck it in the crock pot in the morning.
Sunday we had chili and cornbread
Monday- Steak, cornbread salad

Tonight I think will just be chicken strips, stove top stuffing, roasted cauliflower

Saturday - Parm crusted fish, broccoli and mashed potatoes

Sunday- Grilled steaks, baked sweet potatoes and salad

Monday - Stuffed shells (I will make these this week!)

Tuesday- Black bean burgers/ homemade tomato soup

Wednesday - Poached eggs over asparagus with cucumber/tomato salad

Thusday - Sweet and spicy salmon, rice, zucchini/corn mix

Friday - stuffed spaghetti squash (black beans, corn, peppers, salsa topped with cheese)
 
Well ugh.......... I a feeling a little slack here. :sad2: Most of these are def out of my wheelhouse. lol I am a chicken of some sort in the crock pot 3 days a week with salad & steamfresh veggies and frozen pizza friday. lol

I have been making a list of the ones that sound yummy. Plan on looking them up on allrecipes & food network. Seeing what I can do to add a little excitement to dinner AND not have to hear my kid say one more time "We are having mexican chicken soup AGAIN!!!!!!!!!!!!!!!!!!"

Hopefully in the next few weeks I can contribute something. Keep the good ideas coming! :dogdance:

Thursday - Spaghetti and salad
Friday - it's our Canada night - making Le Celliers Cheese soup and pretZel rolls, some kind of fish
Saturday - Beef stroganoff in the slow cooker
Sunday - Birthday dinner in NYC
 
You guys are so organized! I wish I could meal plan like you all, but crazy work hours and a picky fiance makes it kinda hard. :confused3

I'd love to join in your board! I made bbq boneless pork ribs in the slow cooker for dinner tonight.
Lunch tomorrow will be breaded chicken patties, mashed potatoes and gravy, with leftovers going with me to work.
 
I haven't posted on this thread in a long, long time...years? I do however, try to plan meals. It makes life so much easier when I already know what we are having for dinner. Some weeks go well, some are an epic failure. Here is this week's plan:

Friday - I had the stomach virus, no food in the house. I did all I could to make pancakes and smoothies
Saturday - I had another smoothie, one kid had boxed mac and cheese, the other kid made herself a salad from a kit
Sunday - chicken parm over pasta
Monday - beef with snow peas over jasmine rice
Tuesday - Subway sandwiches we brought home (no drinks, no chips), salad that I made
today - chicken fajitas
Thursday - slow cooker cheesy chicken and yellow rice, salad

Friday – I'm going to make the chicken and broccoli wreath from pampered chef where you lay out crescent roll dough and put the filling in and wrap it up in a circle. I made it for Christmas eve and my daughter loved it. Will probably have salad or fruit with that.

Saturday – I bought us, my mom and sister tickets to see Aladdin on Broadway tomorrow for Christmas. So, we'll eat out in NYC.

Sunday – spaghetti, garlic bread, salad

Monday – chicken marsala, mashed potatoes, frozen brussel sprouts

Tuesday – corned beef and cabbage
 
I'm going to post my meals for the rest of this month. Once I get my schedule from one of my too many part time jobs, I can finish up April's meal plan.

Through the weekend will just be whatever I can come up with. Most likely sandwiches and frozen meals since I work every night and I was sick yesterday so didn't get to make the Chicken Manicotti. I may try to make some fried rice or stir fry tomorrow afternoon that I can eat through Sunday. I also take into account leftovers and eat them because I want to not waste that money/food. Right now I am aiming to eat out only up to twice a month which I have already met for this month *sigh*.

Monday: Lamb shanks, colcannon, and peas
Tuesday: Leftovers
Wednesday: Leftovers or frozen meal
Thursday: Chicken parmesan and spaghetti with roasted red pepper sauce
Friday: Leftovers
Saturday: Braised short ribs with goat cheese polenta
