A bit behind this week but better late than never...

Saturday - spinach strawberry salad with chicken.
Sunday - Chinese take out
Monday - beef kebabs, couscous and grilled peppers and mushrooms
Tuesday - Frito pie
Wednesday - Waldorf salad
Thursday - spaghetti
Friday - Asian chicken salad
 
Just bought a new car. Going to be eating at home for the rest of my life.:rolleyes1

Tonight - Pork Schnitzel , baked sweet potato fries , corn

Thursday- Baked tortellini with bacon, steamed broccoli, garlic bread

Friday- BBQ Chicken, baked potatoes, carrots

Saturday- Homemade Pizzas?

Sunday- Dinner at my parents
 
Hey all! *waves* I keep forgetting to post my meal plans on here! Sorry about that. So I will post my next couple of weeks.

Lunches will be either meals from the freezer, leftovers, or omelets. Picking up a few different vegetables and cheeses to have on hand for either the omelets or to fill out the leftovers/frozen meals.

Snacks will be homemade apple bread, ice cream, cashews, sesame crackers, or fruit. May also make some sour cream dip for cucumbers/baby carrots/broccoli. Luckily, many of the vegetables I want to get are on sale this week so that will help (yay for 88 cent bell peppers, 99 cent baby carrots, and 49 cent cucumbers!).

Now for dinners we have:
Tonight: Roasted chicken and vegetables (potatoes, sweet potatoes, butternut squash)
Tomorrow: Leftovers
Sunday: Chicken Fried Rice using leftover chicken/vegetables
Monday: Sesame garlic chicken, rice, steamed broccoli
Tuesday: Leftovers
Wednesday: Swedish meatballs, egg noodles, roasted carrots
Thursday: Leftovers
Friday: Baked chicken legs, rice pilaf, corn
Saturday: Leftovers
Sunday: Roasted Red Pepper, Mozzarella and Basil Stuffed Chicken, pasta with butter and parm
Monday: Sweet Potato and Feta Dinner Skillet
Tuesday: Asian Salmon and noodles
Wednesday: Pizza (chicken sausage, bell peppers, spinach, onion, ricotta)
Thursday: Meatloaf, mashed potatoes, green beans
Friday: Chicken Chimichangas
Saturday: Leftovers
 
Work has been kicking my behind and I have not been in the mood to cook when I get home. Hoping this week goes better

Last night we had friends over for sloppy joes, chips, fruit, and veggies

Tonight was grilled bbq chicken, baked potatoes, and broccoli

Tomorrow I will be going out for a friends birthday and mom will have leftovers

Tuesday will be chicken enchiladas

Wednesday will be cincinnati chili

Thursday will be leftovers

Friday will be corned beef with roasted potatoes and brussel sprouts
 
Sun - Honey Mustard Pork Tenderloin, Fresh Fruit Salad (Strawberries, Blackberries, Kiwi, Banana), Fresh Bread with pumpkin Oil Dip
Mon - Pork and Beef Meatloaf, Roasted Carrots, Baby Bok Choy and Romaine Salad
Tues - BBQ Baked Chicken, Bibb Lettuce and Tomato Salad, Sliced Strawberries and Kiwi
Wed - Out (Pizza Church Dinner - will be bringing Fruit Kabobs for 50)
Thurs - Steak Tacos, Black Beans
Fri - BLTs, Roasted Potatoes, Cucumber Salad, Sliced Apples
Sat - Leftovers or Pasta and Meatballs with remaining week produce

Monday... Baked egg noodle casserole
Tuesday...Chicken Fingers, Salad, broccoli cheese rice
Wednesday... Chili and homemade bread
Thursday...Chicken and Veggie Burgers, Baked potatoes, sliced cucumbers
Friday.. Buffalo Chicken Dip, Naan, Veggies
Saturday .. Pork Schnitzel, roasted sweet potato/carrots/potatoes, steamed broccoli
Sunday... Going to my brothers for dinner.

Menu Plan Week of April 25th

Saturday- out to eat
Sunday- burgers, avocado & tomato slices, and baked potato wedges
Monday - leftovers
Tuesday - pot roast
Wednesday - cowboy casserole
Thursday - cube steak, mashed cauliflower, corn on the cob
Friday - chicken, rice, zucchini
 
Monday - pizza delivery for the kids and DH (I was sick)
Tuesday - cheeseburger casserole
Wednesday - shredded chicken tacos, rice and beans
Thursday - honey balsamic pork tenderloin, red potatoes, green beans
Friday - chicken tetrazzini, salad and bread
Saturday - burgers and hot dogs on the grill, pasta salad, baked beans
Sunday - grilled bbq chicken, zucchini, squash and red onion on the grill, potato salad.

Now that the weather is nice, we try to eat out on the patio as much on the weekends as possible
 
Menu plan for week of May 4th..

Monday- Spaghetti and Meatballs
Tuesday- Breakfast for dinner
Wednesday- Practice night so something quick.. grilled cheese and soup?
Thursday- Chicken Fingers, Cucumbers and Carrots, rice
Friday- Wraps (ground beef, veggies, cheese, sour cream etc)
Saturday- Roast Chicken, sweet potatoes and salad
Sunday- Mothers day probably at my moms

Monday - tacos, Spanish rice, sautéed peppers
Tuesday - grilled bratwurst, baked beans, mashed cauliflower
Wednesday - Mexican chicken salad
Thursday - Frittata and sausage
Friday - pizza / salad
 
Sun - Dominos Pizza (did the deal), 4 greens salad
Mon - Spinach and Cheese quiche, sausages, roasted asparagus, blackberries
Tues - Steak Tacos, chopped mango, 4 greens salad
Wed - Manwiches, sorrel soup (trying out a recipe with some beautiful farm box red sorrel), roasted broccoli
Thurs - Baked Cod, mango salsa, rice, sliced tomato and cucumber salad
Fri - Chicken Quesadillas, refried beans, leftover veg from week
Sat - Leftovers or Out
 
Love this thread! I *was* doing so well when I was planning meals, then well, life happened and things got crazy hectic. So it was just grab & go half the time. Now that our trip is booked and we're motivated, meal planning is a MUST! For one, we're trying to eat healthier with weight loss goals in mind as well, so eating out all the time just doesn't work. We do allow one meal on the weekends though, which we're going to try to switch to either a snack (ice cream or something) or lunch, simply because it's a bit cheaper... :) So excited to get some new ideas for meals instead of the same old standards. Always nice to have another take on dinner! :)

Monday - Soup (all veggies)
Tuesday - Tacos / Taco Salads
Wednesday - Leftover Soup (from Monday)
Thursday -Baked chicken thighs, bite sized potatoes, green beans
Friday - Chicken stir-fry
Saturday - Pasta w/ sauce, salad, broccoli or green beans
Sunday - hopefully grilling out for Mother's Day. Either way, I'm not cooking! LOL
 
This weeks meals! I did really good last week, stuck to my menu for the most part, and stayed under my calorie limits. Hopefully I can keep going.

Lunches: Salads (made my own salad dressing out of coconut aminos, peanut butter, sesame oil, and honey), wraps, omelets

Dinners:
Tonight: Steak, half a baked potato with butter and sour cream, roasted squash
Tomorrow: Asian salmon and noodles
Wednesday: Homemade pizza with chicken sausage, red bell pepper, spinach, onion, and ricotta
Thursday: Meatloaf, mashed potatoes, and green beans
Friday: Baked chicken chimichangas
Saturday: Leftovers
Sunday: Leftovers
 
I'm going grocery shopping tomorrow for meals for the next two weeks with a super tight budget. Fingers crossed that I can stay on budget! We are planning on taking a rather last minute little weekend road trip in a couple of weeks and we need to save a bit of extra cash for that. I looked at what we had in the pantry and freezer and tried to plan some meals around that.

Monday: ww pasta w/ a walnut, garlic, caper, olive oil sauce & roasted carrots
Tuesday: phyllo encased veggie pot pie
Wednesday: marinated portobello mushrooms, roasted cabbage, & quinoa
Thursday: eggplant & cashew ricotta parm, kale
Friday: leftovers
Saturday: chickpea & soy curl matzoh ball soup
Sunday: jerk tofu, rice, ripe plantains, and roasted carrots

Breakfasts: banana bread waffles, lentil soup, smoothies, irish soda bread, chickpea breafast patties
Lunches: TLTs, chickpea nicoise salad, eggplant/tomat/avocado/pesto stacks
Snacks: healty "frosty", lentil muffins, oatmeal baked apples, veg/hummus

Last night we went out for my Aunt's birthday

Tonight we had leftovers

Tomorrow I am making homemade Cincinnati chili over baked potatoes

Thursday will be BLT sandwiches with chips and fruit

Friday will be corned beef with sweet potatoes and brussel sprouts

Saturday will be bbq chicken and pineapple quesedillas with rice

Friday- grilled chicken, artichoke bake, salad
 
We got sick for 3 days right when I got my weekly produce box for the farm. So, I'll be spending this week using up produce before it goes bad and trying to start feeding unsettled tummies again.

I'm planning (in no order)...(we had grilled chicken tenders, blueberries, and spring mix salad yesterday for those well enough to eat)...
BLTs with Cucumber Salad and Blueberries
Chicken Tacos with Chopped Mango and Cilantro Rice
Rib Eye Steak with Carmelized Onions, Corn on the Cob, and Mashed Potatoes (Mother's Day delayed til we feel up to it)
Roasted Chicken with Radish and Bibb Lettuce Salad and Strawberries
Stuffed Roasted Squash Boats, Meatballs
Leftovers

This could totally change and I still need to add in space to get rid of an extra veggie or two...but the goal is to get everyone well and to not let food go bad (in that order)...I may be making pestos or soups to use next week if I get overloaded...
 
This week will be a little different since we'll be out of town the latter part.

Monday - leftovers: quinoa & mushrooms, ww mac & cashew cheese
Tuesday - creamy eggplant casserole, steamed kale
Wednesday - homemade veggie burgers to eat in the car, chips
Thursday - out to eat w/ a Groupon
Friday - either out to eat or in laws
Saturday - in laws
Sunday - raw walnut "meat", avocado, & baby greens wraps if we make it home in time for a quick dinner

Breakfasts are homemade frozen waffles and smoothies
Lunches are various salads
Snacks are popcorn, ants on a log, and hummus w/ cucumbers
 
Monday - Cajun chicken pasta
Tuesday - maple brown sugar pork tenderloin, mashed potatoes, green beans
Wednesday - French toast casserole, bacon
Thursday - pizza takeout
Friday - spaghetti, salad, bread
Saturday - dinner out at baseball game
Sunday - chicken fajitas, rice and beans
