The What's for Dinner Thread- June 2012 (recipe index in OP)

....well, I still haven't begun to do my Christmas shopping, but I'm really happy that my brother is FINALLY out of the hospital and will be home for Christmas! :cool1: He has almost 70% of his eyesight and those 3 infections are pretty much gone. It's an uphill battle with his foot, and, since he has dropsy, it's hard for him to get around....

I just checked back and am so happy! He will make his strides, Kim. It takes time. My Mom had some sort of neuropothy and the Dr said she would never walk again but she did! And he will walk well too!

....well, the doctor doesn't really want him to venture out, but he's coming from down the shore to spend Christmas Eve with the rest of us! :hyper:

....my DSis and her family visited my house on Christmas Eve, my DBro and his wife, along with their twin DS and DD, and of course, my brother, who was in the hospital for 60 days, accompanied by his DD. They had travelled from down the shore in her Jeep, while her mom would be spending Christmas Eve with HER family. A good time was had by all, and it was wonderful to get the family together. My brother was leaving soon, so he offered my niece a ride to my [sick] brother's wife's relatives house nearby, while the plan was to leave the Jeep behind, so that my brother could drive home the next day [since he'd been hospitalized for such a lengthy stay, I felt safer knowing that he would be driving home during the day, as opposed to later in the evening, in the dark].

After some visiting by friends and other [extended] family members on Christmas Day, my brother headed back down the shore around 3:30. I reminded him to call me when he reached home so that I would know that he had safely arrived, but I unfortunately never got that call. Two hours later, I frantically called his cell, with no answer, so I decided to call his daughter [they weren't at home, but were at a friends' home, 15-20 min away]. My niece said that she'd try to contact him and call me back. Well, she did, around 10 minutes later, and had also called another friend to stop by their house to see if her car was in the driveway, but of course, it wasn't. I tried several times, to no avail, when my niece called be back, hysterically crying; they'd called the State Troopers - apparently, he'd been cut off in the center lane on the Parkway and, to avoid hitting the jerk, he stepped on the brake and swerved, flipping over 4 times! Other cars that had seen it, pulled over and called 911, so he was rushed to the hospital. Ironically, it was the one that he'd just spent 60 days at, but it's also a trauma center. I told her that I'd meet her there, and off my DH and I dashed. However, moments before we were getting onto the NJTurnpike, my brother called me. He was at X-Ray and (getting a CAT-SCAN) so he didn't call me, but assured me that he wasn't too bad (THANK GOODNESS FOR SEATBELTS!), but was in some pain and that he thought that maybe he had a broken rib of two. Well, he assured us that the hospital was keeping him overnight for observation, so hat we didn't have to go all the way down the shore, and my niece and her mom had just arrived at the emergency room. I really felt bad for my niece for, not only being scared out of her wits, but she paid for that car all by herself, with her hard-earned money [they had to cut off the roof to extract my brother]. The happy ending is that he is alive, but really, how much more bad luck can he take? I sure hope that 2013 is a wonderful year for him....

Tiny Teddy Sleighs



This is totally for those of you out there that don't cook. It is completely assembly only! No screwdrivers nor batteries required.

A 2D friend of mine posted a link for this recipe. I wish I could find the link......but what with everything, I can't remember where that post was posted and in any event, I've got pictures.

For this recipe, you'll need:

Candy Cane, mini ones.

Do you know that it is near impossible to find individually unwrapped Candy Canes? I started out with a box of 50!

These were the ones that I found broken or cracked! Perfectly fine for eating or handing out on Christmas Day; but not cool for this recipe. :headache:

And the wrapping? My bane in life! I am capable of doing a lot of things in real life; but the bane of my existence has got to be things that come shrink wrapped (like my home delivered newspaper. I've decided that the aggravation of the unwrapping is more than I can bear and so we will be terminating our home delivery subscription when it expires).

I spent the better part of 30 minutes with very un-Dislike words coming out of my mouth and being an electrostatic magnet to these things!

Hmmm......maybe I did start out with a few more whole candy canes than were actually broken in the box. But I'm not admitting to anything!!


Milky Way, mini bars - cut in half. Yet more packaging! Thankfully, using the scissors to cut open makes the unwrapping a lot easier to deal with for this ingredient!

Tiny Teddies - one box of any description. I went with the half-back chocolate coated variety. And some frosting - of any description. I went with Betty Crocker chocolate frosting; and discovered a whole new taste sensation.

Those teddies and the frosting are a match made in heaven!

To recap. My starting ingredients:

To assemble, take two candy canes and use the frosting to attach to the Milky Way. I put a dob of frosting at the bottom of each half the Milky Way. Push the candy canes in place with one half of the Milky Way (I started with the back section); then ease the second half of the Milky Way under the cane curl.

Put a little frosting on the back of the Tiny Teddy and put him between the two Milky Way halves.

Continue for as long as you have ingredients!

Those are so cute! But OMG! Way more work than I have time to put in! Boy I can't wait to live the life of luxury, sitting around eating bon bons! Not that I suggest that you do, but I can't for it to happen for me!

Way more w-o-r-k than I cared for as well. I thought they looked simple because there was no cooking involved and I was preparing them for Christmas Eve dinner (which I've posted in my Anyone Game PTR....:rolleyes1). The bane of my existance.....packaging!!!.....took up way more time than I expected. And I couldn't use a knife or scissors to help either. I tried...only broke more! If I can find unwrapped ones, I might consider them for next year. Once everything was unwrapped, it literally took about 5 minutes to assemble a dozen of these sleighs.
 
Oh Kimmar! 2013 has got to be much better!

I hope that everyone had a wonderful Christmas Day! I was tired today but it was so worth it. Dinner was excellent and I spent the better part of today grazing :rotfl:

...and the weird thing is, we put his stuff in the car, and helped him get in, and as I watched him drive away, I had that sinking feeling....
 
We've been at my parents's house since Saturday, and that always means good eating!

We arrived too late on Saturday for anything other than some badly cooked McDonald's french fries while we were on the road. But we made up for that starting Sunday evening. We were supposed to go out to dinner, but it was cold and rainy so instead we cooked big cowboy ribeye steaks with baked potatoes at home. No pictures, sorry! :crazy:

We served Chicken Marsala over Papparedelle noodles with artichokes.

I posted a little too soon on that last one, but oh well!

Christmas morning, I turned the leftover baked potatoes from Sunday night into a ham hash. Then I became a short order cook and made everyone eggs cooked to order.

We cooked it for 30 minutes on a relatively high temperature while we opened presents and just let it sit for the rest of the afternoon. A couple hours before we were ready to eat we turned it back on at 200 degrees and it came out perfectly medium rare!

Our Christmas dinner (was the same as it usually is!) consisted of Prime Rib, Roasted Potatoes (in our family we call them Roberta potatoes, but they are just the ones on the Lipton Onion Soup package), Mushrooms in Burgundy and Green Beans.

Great looking meal and roast. Still a little red for me but it looks like it would have been very tender.

I think I could have eaten that entire chocolate cake by itself!

Sometimes, you just know! but can't really say or do anything about it. I hope he's getting better.
 
Howdy, all. It's me, again, hopelessly behind!!! Yesterday I made beef stew and cornbread for dinner and today was leftovers. It's so cold and gray here I just want to go to bed and cover up my head, you know?

Hope you had a Merry Christmas.

Weather has been reasonably good here with blue skies and balmy breezes. :teeth: Although, it did drizzle this morning and is cloudy right now. Stay warm!
 
Today is more Christmas! My stepsister and her family will be in from Knoxville today so we are eating at my mom's.
