The What's for Dinner Thread- June 2012 (recipe index in OP)

....well, I still haven't begun to do my Christmas shopping, but I'm really happy that my brother is FINALLY out of the hospital and will be home for Christmas! :cool1: He has almost 70% of his eyesight and those 3 infections are pretty much gone. It's an uphill battle with his foot, and, since he has dropsy, it's hard for him to get around....

Do you every make enchiladas or tamales? I've been noticing that they advertise the tamales as being GF? I think about you a lot when I'm making dinner and realize the challenges that you must face trying to feed everyone in the family and making everyone happy.

.....Black Bear roast beef was on sale at Shop Rite yesterday, and it was really rare, so I bought 1-1/2 lbs of it. I made some GF brown gravy, put the sliced meat on a platter, spooned some of the gravy on top, and topped that with thin slices of mozzarella cheese. Finally, I stuck it in the microwave for a little less than a minute, to melt the cheese. I made mashed taters to use with the leftover gravy, and homemade creamed spinach....YUMMY! THAT was what was for dinner last night....
 
Yum! I love creamed spinach!

....it's so easy too. I bought a pkg. of fresh spinach and sauteed it in a little bit of water to 'steam' it. When the water was almost fully evaporated, I added 4 pats of butter, 1-2 oz of light cream and 1/2 t. garlic powder and stirred everything together to melt the butter and mix the ingredients. It tasted so good!

Your dinner sounds great. And I love your creamed spinach. Gonna have to try that for my pesky vegetarian very soon. :thumbsup2
 
...ah.....well, I usually buy it rare, so, that when I put it in the microwave, it DOES 'cook' a bit and the meat loses some of its redness...

Tomorrow we leave for the folks house for a few days, but once we get back, as long as the parks don't reach capacity we're up for shopping! Fran wanted to go see the Christmas lights at Carsland tonight, but we just have way too much to do before we leave!

Girls- I have been so remiss in posting but have been swamped at home. I finished this semester on Monday an then needed to start Christmas. I am so sorry@

oh, BTW- I like my beef mid rare! Which is how I am serving it CHristmas Day. Marisa's rack of pork will me medium, I hope!
