The What's for Dinner Thread- June 2012 (recipe index in OP)

Dinner tonight will be at 8:30 or 9... As soon as DS13 get home from his football game...

Chicken cordon blue (from a box, frozen)
Corn from the farmers market
Salad from a bag
And some frozen yeast rolls.

Don't judge me...

How sweet :hug: I do the same thing...in fact my mom died today several years ago. I need to make a Red Velvet Cake from scratch. ::yes:: She use to call it The $200.00 Red Cake. Used Swans Down flour. Ahhh memories!



Thank you Alison. I will check one of my Barilla boxes. The family member used to make her own pasta for filling. :thumbsup2 It was fantastic...lots of work but oh so delish.

Thanks Ann.... I was hotter than I was expecting and not sure how much hotter it will get as it sets, but I have no idea how to transport them. My Dad wanted me to bring him one when we fly in October... How do you take that on a plane, underneath I know, but in my luggage?
 


Ladies, just a quick fly-by! I have been in school and my mind is mush! I have been cooking but nothing fancy.

Tonight we are just going to have leftovers, I do not want a mess in my kitchen. I have to be out of the house tomorrow morning at 5:15 to go to the surgery center so I needed to make sure my house is all in order. Now I am off to get a pedicure!
 
Marilyn - Hope you have good news about your godson soon.

It's okay news. He does have a stress fracture however if he is very, very good, does exactly what the Dr. says he will be out for only 2 games. :thumbsup2 He's wearing a boot cast and will be on crutches for the next week then just the boot for the next two weeks. He goes back for an MRI in 3 weeks and if everything is good he can play the next game.

Surprisingly, I have some chicken maryland defrosting on the sink at the mo'.

Place it in two gallon ziploc bags, then wrap it in bubble wrap, then in a towel and it should be well cushioned.

So those of you on FB may have seen my post about Jackie Chan last night. He is my youngest DN's hermit crab. He decided to run away from home yesterday. :rotfl: I went to spray the two crabs we have with water last night, have to keep their little lung thingy's moist, and one was gone. :confused: So I check the whole desk area their cage is on and my DM crawls around the floor, looking in everything under the desk, under a chair and finally finds him under the curtains near the back door.

Spritz him, put him back, go downstairs and when I come back up about an hour later, there he is trying to get out again. The cage they are in, which is specifically for hermit crabs, has several openings which I think may be where pieces can be added. Kind of like in a habitrail for hamsters. He had managed to twist the one open and was pushing his way out.

I put a candle holder on the opening and when I come up the next time my DM had replaced it with this really heavy book, he had tried to get out again. :rotfl:
 


So I got dinner inspiration from Ann's Chicken Rosemary recipe the other day.....



My starting ingredients:

Chicken Maryland - 2 pieces. I had this in my freezer and figured it needed to be cooked and eaten.

A whole bunch of vegetables - cut for roasting.

For the Chicken


I chopped the parsley and some of the rosemary, sliced some garlic and slipped everything under the skin of the chicken.

Pan fry....

...to get a bit of colour on the skin.

Season with salt and pepper. As I had lime in the house, I squeezed a generous amount over the chicken skin. I even spread a little bit of butter on the skin. Place on a baking rack and tray and bake in a hot oven (210 C) for 35 - 40 minutes. The chicken should be nice and golden at this point.

Remove from the oven and let rest.



I had about 1/2 cup of chicken stock in the tray underneath. Strain the liquid/pan juices into a pot and add about 1 heaped teaspoon of corn flour. Heat on the stove until it thickens. This made a lovely gravy.

The roasted vegetables


As I was only cooking the chicken for about 35 - 40 minutes, I panfried the potatoes to get it started....

....and to get a golden colour on the potatoes. Transfer to a baking dish and add some rosemary sprigs and garlic to the potatoes.

Bake for about 40 minutes.

I also pan fried the other vegetables.

As the zucchini is a softer vegetable, I only added it to the pan so that they got coated with oil.

Transfer to a baking dish. I added sage to this dish.

Bake for 40 minutes.

A simple shrimp mix


I mixed some parsley, ginger, 1/2 teaspoon of sugar and oil to the shrimp.

Pan fry on each side...

...until cooked. Only took about 3 or 4 minutes on each side.

Dinner last night was left overs....

but spruced up a bit.

I had left over egg drop soup and fried rice, so those were just warmed up.

I had some beef boneless ribs that were cooked up over the weekend

I got David to shred the beef, while I cut up some broccoli, and onions, and got some asiago cheese crumbled. I had left over egg roll wrappers, so I made beef, onion and cheese egg rolls.

I am so sorry I have been MIA this week. Work has been CRAZY!!! All of the Church activities have started back up this week. It has been great to see all of the kids and the church bustling, but it has cut into my Dis time. :rolleyes: Hopefully it will slow down some.

WFDT ~ Crockpot 3 ingredient roast beef, mashed potatoes, green beans and a snicker salad. We are going over to Elizabeth and Jay's and I am bringing dinner. Fun times, I can't wait to get my cuddle time in with those boys.

See you can cook grill fish and now rosemary chicken. It is so easy and you can change the recipe around for any herb you may have on hand or like. I have served this to company and they stood around the kitchen picking at the bones after dinner LoL .

Hope your grease burn is healed.

Bigmurle suggested a super idea to get your salsa to your dad. That is how I transport wine on vacation, I sometimes even but it in a boot of my husbands or mine after wrapping it .

Your left over dinner redo...super idea and yummy. Really a whole new dinner!

PIO your chicken dinner looked so wonderful. And the shrimp how easy and looks so fancy. Going to add that to my list. We love shrimp but I tend to either do peel and eat or some with a heavy sauce and pasta. Thank you for the photos helps to visualize the process.

I am posting from my iPad, which is new to me so can't figure out how to do smilies and multi quote. Anyone have experience please share.

Wow, sounds like he has a date! :drive:

He better do what he's told, his momma and daddy need a scholarship to send him to college. ;) Although his lacrosse coach was teasing his mom that he could get him in to a good college for lacrosse instead. :rotfl:

All kidding aside he really wants to go to a good local college and be able to play one or he other although he really really would love to be able to do both. He's the all around athletic type.

And I really think I need to get a bigger space for the hermit crabs especially since I may be getting another one for my godson. :crowded:
