The What's for Dinner Thread- June 2012 (recipe index in OP)

....WFDT? Well, I have a dentist appt today for 3:30, so I'm throwing some chicken thighs in my crock pot, along with a couple lemon halves, some white wine, and crushed garlic, s & p [to taste] and everyone has to fend for themselves....

That sounds pretty good. Might have to make that for dinner one night.

Yes I know it is "crockpot" chicken but it's much better than my DM's version of putting an entire chicken in the crockpot and shaking some sort of seasoning at the crockpot, rather then on the chicken itself. ;):rotfl:

...OMG, it is so super simple and you don't have to spend hours in the kitchen. Best of all, it simmers in its own juices and the whole house begins to smell like lemon and garlic! AWESOME!
 
Hi, everyone. Sorry to drop off the DIS for a while. We went to my dad's for a few days, then when we got home, we had to scramble for Katie's 15th birthday. I'm hoping that things will calm down some, in the next couple of weeks, but I'm not holding my breath!

Katie's party is Saturday night. She's a trifle Beatle's obsessed, so her party is all Beatles! There will be Beatle's music, dancing, Beatle's crafts, watching 2 Beatle's movies, and of course the food. She is serving:

Sgt. Pepper-oni Pizza
Let It B-L-T bites
Here Comes the Sun-chips
John Lemonade
For the Benefit of Mr. Sprite
Strawberry Fields Forever ice cream
The Long and [Rocky] Road ice cream
Cake

She's also trying to work out something along the lines of Lucy in the Pie with Diamonds. Don't know about that one.

Dinner tonight is ranch house pork chops and garlic mashed potatoes.

Tonight I had this amazing goat cheese and heirloom tomatoes for salad and we both loved it...

Glynis - nice menu and HB to Katie. Did she manage to resolve tangerine trees and marmalade skies into the menu?

Brandi - lovely looking meals!


WFDT? I'm cooking a salmon loaf and will serve that with beans. I'm debating making a lemon dressing to go with the beans.
 


Good Sunday Morning!!!!!!!!!!!!

Ellen- I have been thinking of you and wondering how your family is doing. I know that Mathew and Liz were okay after the accident but hope that they are not too sore now. I also have been following the weather pattern in the Midwest adn know that your corn farmers are suffering. Our insurance agent told me that she has been getting calls already. We also got FSA disaster area updates due to drought and the red area covers a lot of space :( In our area it is clear that lack of rain is impacting our growers. The apple guys are in trouble. We had very high temps in January, Freeze warnings after the buds this Spring and now sunburn on the fruit. Not good.

Glynis- how was the party?

We went to Donny's last night. He is learning to BBQ and so he wanted to test his food on us. He and Anna have also been working hard on their yard, it was pretty overgrown when Anna purchased and she was over her head clearing it out. Donny had a condo- he hated yard work ;) Buddy is totally amused now, yard work now Donny's middle name!

Anyway, we all brought side dishes so that was fun and the BBQ'd meats were delicious! He had two different kinds of ribs, smoked chickens, and grilled burgers and dogs. They are coming by some time today to swim so I think there may be leftovers in our meal plan ::yes::

We are going to a graduation party down on the river. Buddy grew up on the Farmington River and loves going back. I have no idea what the food will be but our friends usually roast a poig or a large piece of beef along with the usual picnic foods. I think I am going to bring a dessert or will just head over to the package store for wine coolers. Yes, I said Package store :thumbsup2 CT can finally purchase alcohol on Sunday!

Sounds like you had a great evening full of good food and more to come...

Glad you can buy on Sunday... I grew up in a dry county, and it went wet while I was in college and you could not buy on Wednesday or Sunday.

Now that I have moved here... I can never remember that I can buy any day I want!
 
Good morning, everyone! The party was a huge success, if the smile on Katie's face means anything! She's been having self-esteem issues (what teen doesn't, right?), and it was nice to have an evening be just about her!

She invited 13 girls, and 8 of them were able to come. Not too shabby! They crafted, danced, ate, watched movies, and played around our neighborhood until 11:00 last night. I was exhausted just watching them! I crashed into bed and didn't hear anything until about 6:30 this morning.

Now, I'm just getting everyone ready for church.

Dinner is up in the air. I'm thawing some chicken tenders, so I may just fry them in a parmesan crust. I got some really nice zucchini yesterday, that I want to do in a casserole that my mom used to make. We also have tons of birthday cake and ice cream left over. We'll be able to make a pretty good meal out of all that!

It should be roughly the same. I did post a recipe of the salmon loaf in one of the previous threads...if you want it let me know.
