The What's For Dinner Thread - August '09(recipe index in OP)

Tonight's dinner is a mystery. I have a pork tenderloin that I have to use, but I can't decide how I'm going to fix it.
 
She seemed to like it okay, she came in 9 out of 12 which isn't too bad considering she just did it in competition for the first time.

That's great! I am glad she is sticking with it.

It also looks like we'll be staying in the treehouses, but won't know for sure until December.

That is really cool! I wish you luck keeping the trip a surprise. Becky suggested doing that once, but I know I could never do it, and she couldn't either. She would explode. She used to buy the kids two sets of Christmas presents because she couldn't wait until Christmas. :laughing: Her DH put his foot down on that one.

I'm not sure if swimming would be for Liam. He likes being in the pool, but he isn't very interested in learning the specific strokes.

WF's had a buy the salmon get all of the following: green beans, a baguette, salmon seasoning & pre-made rice pilaf for free!

Wow! That is a great deal! Your dinner looked so good. I am really hungry now.

I agree! Is Kady still in her pajamas? I like pajama days. I think my kids would have stayed in their pajamas today if their friends had not come looking for them.

Emma starts tennis this afternoon.

Fingers crossed! I hope they can work out the schedule. It would stink for Katie to be stuck in a level below her ability.

Today we have gymnastics. I am thinking about making soup for my dinner.
 
Marylynn- I'm already a basket case, I think planning a vacation is almost as fun as the actual vacation part. It also looks like we'll be staying in the treehouses, but won't know for sure until December. My parents are going with us and we are staying on their points. I'm one lucky kid. See, I butchered your name again!

Hopefully that will come through for you, we saw a scale model and they look really nice. I told you, don't worry about the name, at least you didn't call me Martha or Meredith. ;) :rotfl:

Timothy started walking last night. He worked so hard on it all day yesterday, and when Alan was home, he was ready to show off! It was so cute to see his little face all serious as he concentrated on keeping his balance, and when he reached Alan, he just looked up with the biggest grin on his face! It was so cute! I do have to admit that I cried, though. It's so wonderful to watch him grow up, but it's also bittersweet!

Hi everyone. I haven't posted the last couple days because I have been in a funk. I really thought I was on the uphill swing, but last Friday was the two month mark and I spent most of the weekend depressed. I know time makes things better, but the upcoming holidays aren't helping much.

That look really good! I am having salmon for dinner tonight, think I need to jazz it up a little. I'm going to make it with some roasted squash and rice or pasta.

Laura- The only reason we have a fighting chance of keeping it a suprise is because we never go at that time of year. I too think one set of gifts is sufficient. Anything that gets bought this time of year is a Christmas present. I'm so cheap and stingy the rest of the year I like to go all out at Christmas. Besides, with one kid I don't need to worry about things being even.

Gretchen- I'm sorry your having such a hard time. I really wasn't planning on this being a "first" thanksgiving and I'd really like to just cancel it. I'm going to rearrange the seating that I usually use though so everyones in a different spot. I don't think I could handle looking at my gram's empty seat.

Nancy- Hope you enjoyed your pancakes, sure can't let them go to waste!

Sheryl- That picture makes me wish I liked salmon!

Glynis- Hope things work out for Katie. Thanks for letting us know about Jan.

Kathy- My husband's working today, there seems to be quite a few everyone else gets off that he doesn't.

Turkey for dinner tonight. I have it cooked and I'm hoping I can get stock made today and frozen too. The turkey was thawing before my gram and I don't think I could have refrozen it. We have to go to NY, but I think I can get all done. We are going to have lots of frozen cooked turkey in the freezer.
 


Lauren, I'm using photobucket. I'd be interested in something easier! It's a pain to use, slow to upload & then I have to fight with it to resize pics.

Marilyn, All I did on that salmon was use the seasoning mix that came free, a Northewestern salmon rub, plus fresh chopped rosemary. I cooked down the maple syrup until it was thick & brushed it over the salmon when it was almost down. It was really good!
 
I use flickr for picture sharing. So does Laura. It is super, super easy. I have a pro account but you can host your pictures for free there too. There's just a limit to how many you can load a month if you have the free account--it's a lot though--a couple hundred at least.

Nancy, can you share Welby's chicken deluxe recipe? I am always looking for new ideas for chicken. Anything with "deluxe" in the title has to be good!

Kathy, I hope you are feeling better. Everyone is getting this cold, it seems.

I don't have photos from yesterday..I just made an avocado BLT. You've seen that before so I did not bother. Today I am making two things: the lemon-balsamic-rosemary chicken recipe I have shared here before, plus some mustard-roasted potatoes and an assortment of green veggies--broccolini, asparagus, snap peas, and green beans. I am not sure if I want the chicken so I also made a batch of my version of Artist Point's smoky mushroom soup. It's all ready to go, I am just waiting for my Mom to get home from work and then I'll bring everything over.

Other than cooking it has not been a very productive day off for me. The BLT upset my stomach last night so I ended up staying up until about 1 AM! Good thing today was a holiday and I did not have to get up for work!!

Here is the beef satay recipe:

Beef Satay with Peanut Sauce (this recipe would also work with chicken)

1 lb flank steak -- cut into thin, wide strips against the grain

Marinade

1 can unsweetened coconut milk
1 tbsp soy sauce
1 1/2 tsp curry powder
3/4 tsp ground coriander
2 tsp cornstarch

Whisk all ingredients together, then pour over beef. Marinate, covered, in the refrigerator for at least one hour or as long as overnight.

Peanut Sauce

1/4 c, plus 1 tbsp smooth peanut butter
1/2 c unsweetened coconut milk
1 tsp minced fresh ginger
1 1/2 tsp sesame oil
2 tsp soy sauce
1 tsp brown sugar
1 tbsp lime juice
1/2 tsp Thai fish sauce
1/4 tsp cayenne pepper
1 tsp minced garlic

Whisk together the peanut butter, coconut milk and ginger. Add the remaining ingredients and whisk to combine.

Preheat the broiler and remove the beef from the refrigerator so it has a chance to warm up a little before cooking. When the broiler is ready, broil the beef close to the flame for 1-2 minutes per side, or until browned.

To serve, place beef on skewers. (If you're more daring than I am, you could soak the skewers and put the beef on them before broiling. I usually set things on fire when I try that though.) At this point, you can serve the beef with the dipping sauce, or dip the beef skewers in the sauce and then in toasted sesame seeds like I did for the party.

I went to World Market earlier & just figured out how much I saved! Coffee was buy one get one free, I bought 4 saved $17.58, I had joined the wine club buy 6 get 10% off saved $5.00, bought a coffee grinder & a gravy fat seperator came to over $100 so I got to use my $20 off coupon!! Cha-ching I saved $42.58!!! :yay:

Becky- I sure will share that recipe once I make it. Welby made notes for me so I need to make it so I can figure it out. There was a little restaurant by the lake that was run by"Nora'. This was a cozy place that Buddy used to go to and we enjoyed a lot. Her food was home cooking, not at all pretentious. Welby got the recipe from her and refers to it as her heart attack on a plate served with baked potatoes topped with the heart attack sauce. She and Brian do not bother with any veggies when she makes this :rotfl: and she said they sometimes does not even have the starch....just chicken :laughing:!

Laura- Kady got dressed like a flash around 1:30. Her BFF called and asked her to come over, they would pick her up. I had to hurry up and make the bed so that she could show her friend her new room! She had me chuckling.

I cannot keep a secret either. I understand Becky and her two sets of gifts. In this house it would be Pa that had to be roped in though :lmao:

Buddy still has a looooooooong way to go. The bath thing is his answer to everything ;) Headache...runs a bath. Fever...hotter bath. A cold.....vapobath. Stomach bug....more vapobath. :rotfl: I am thrilled though because he is a totally chauvanistic guy who has no idea that he should have become extinct years ago so this is way out of his comfort zone :cloud9:

I also get to meet with Katie's counselor this afternoon. Her orchestra teacher wants to move her into the Intermediate class, and the counselor and I get to figure out how to do it. It's going to be hard, since she's in the advanced science and English academy program, but we'll see what we can do. She may have to stick it out in Beginning until the end of the year. It makes me a little mad, since I had originally signed her up for Intermediate, but the old orchestra teacher stuck her in Beginning. Cross your fingers for us, ok?

Not sure what dinner will be tonight. I need to figure it out. I'll BBL to tell y'all what we've decided.

We are. One of the districts took off Monday but made it teacher in service. All of them are in session today. They never get days off in the middle of the week anyways.

It's crazy today ~ perhaps more than usual? I even canceled my original plans for the kids tonight because I can't get it pulled together. I leave town tomorrow and HAVE to get some other stuff done.

By the way, there is major (public) drama going on around here again. Monday it will hit the fan and there is nothing we can do about it. I wish I could give more details but I don't know who is reading. It's all about politics and money but is causing many of us a lot of stress and time. If you would just remember us I'd appreciate it.

I ate a big lunch so hopefully I can get through tonight without needing anything.

Aimee - My 2 cents for what its worth. Go see a surgeon, if only for a second opinion. Depending on the damage, it may be better to get it removed now, than wait for something bad to happen. My Dad had Chron's, was diagnosed very late in life and had his intestine rupture. He never really recovered after that.

Look at me, 2 posts in one day!;) Busy busy as usual today. Got Emma off to school, got Matthew off to school, headed to Emma's school b/c I help out on Wed (got to paint today-still can't get all the blue out of my fingernails!), home for a quick bit, pick up matthew, pick up Emma, and then off to tennis. Luckliy Emma's school has their Domino's pizza fundraiser tonight (the school gets 20% of whatever our order price is), so I didn't have to cook.

Kathy--I love that you will always come to hunt me down should I disappear! Love ya!

Sheryl--food looks yummo! Our new "daughter" isn't a fan of fish, so will have to wait until break until we can fix the salmon! Great job on the savings at World Market (sure wish we had one here)--but DH would tell me that I didn't really save us any money b/c w/o the coupons I wouldn't have spent anything. Oh well. Leave it to the man to come up with that logic!:rotfl2:

Nan--Kady sounds vaguely familiar to a small female living in my house! How hard it is to get out of bed for me, but a friend coming over--a different story! Chocolate chip pancakes sound yummy!
