Hello all! Busy, busy here still. We had applied a few weeks ago to host an intern from our church for the school year. We never heard anything , so we figured we weren't needed. Then I got an email a day ago with the move in schedule for the students for this weekend. Turns out they do need our space. And it was a case of everyone thought someone else had contacted us. So I've been ferverishly cleaning our guest room and closet for the student to move in this weekend.

Please keep DH in your prayers today as well. He has a Dr. appointment this afternoon. His blood pressure has been really out of whack and they have been trying to get it under control. He needs a med. card for his new job and there are blood pressure requirements to be met. TIA.

You are so right Ann. The delay is because the buyer wanted to structure the loan to include the $$$ he will be spending on renovations but it didn't finalize that way so he's having them re-structure the loan. It should be done within a week but he asked for a two week extension just in case. I immediately thought "oh no, not again" but I really feel this IS going to happen.:hug:

Sirius radio has spoiled me rotten!!!!! I was only going to enjoy the free trial period, NOT, I'm signed up for a year!;)

Sheryl--poor Alexis! Glad to hear that she made it through surgery. Hope her recovery is smooth and as pain free as possible! Give her a hug from me!

Ann--glad you are liking the van! Sometimes wish I had the Sirius. But the kids chose what we listen to or watch in the van. I wouldn't get a say anyway. ;)

I'm working tonight, so no cooking for me. I think the kids will probably have something along the lines of tacos tonight. Not sure though--leaving it up to my mom.

Gonna go find that recipe from last night right now!

Here it is, very yummy and from my fave host! I didn't make the flat bread, just bought some at the store. I also only marinated the chicken for about 7 hours, and it was still very tasty!

Good Karma Schawarma

Cook Time:1 hr 0 min

Level:Intermediate

Serves:6 to 8 servings

Ingredients

* 2 cups plain yogurt
* 1/4 cup minced garlic
* 3/4 cup minced onion
* 1/4 cup red wine vinegar
* 4 tablespoons freshly chopped parsley leaves
* 2 tablespoons chopped fresh oregano leaves
* 2 tablespoons salt
* 1 1/2 tablespoons ground cumin
* 1 tablespoon freshly ground black pepper
* 1 tablespoon red chili flakes
* 1 teaspoon fresh sage
* 4 pounds boneless, skinless chicken thighs, cut or pounded 1/8-inch thick
* 1/2 cup frozen spinach, thawed and chopped
* 1 cup roasted red bell peppers, cut into strips
* Tzatziki sauce, recipe follows
* Flatbread, recipe follows
* Special Equipment: 8 by 12 by 4-inch aluminum tray

Directions

In a large bowl, combine yogurt with garlic, onion, vinegar, parsley, oregano, salt, cumin pepper, red chili flakes, and sage. Add chicken and marinate in the refrigerator for 12 to 24 hours.

Preheat oven to 350 degrees F with oven rack in center.

Fit a 9 by 13-inch baking sheet with a cooling rack. Remove chicken from marinade, taking off excess marinade. Place meat randomly on top of each other on the aluminum foil tray, creating 1-inch of meat. Add spinach, spreading evenly, and repeat with another 1-inch layer of meat. Add a layer of red bell peppers, and finish by covering with another inch of meat.

Press layers firmly together. Remove foil tray with chicken to the baking sheet. Poke holes in bottom of foil to allow excess liquid to drain. Bake in center of oven

for 45 minutes until chicken is firm and holds together. Cut corners of tray and push the sides of foil down, to expose meat to brown. Continue to cook for another 30 minutes or until the meat registers an internal temperature of 165 degrees F. using an instant-read thermometer.

Let rest for 10 minutes. Remove Schawarma to a cutting board, discarding foil. Slice into 1/2-inch thick pieces.

Serve sandwiched in flatbread and drizzled with Tzatziki Sauce.
Flatbread (Chapatis):

* 1 1/2 cups whole-wheat flour, plus extra for kneading and rolling out dough
* 1 teaspoon salt
* 1 cup water

In a medium bowl, combine flour and salt. Using a wooden spoon, slowly stir in water, until dough forms. Lightly flour a clean board and knead dough until smooth, about 10 minutes. Rest dough in bowl, covered with damp towel for 20 minutes.

Preheat a griddle over medium heat.

Divide dough into 8 equal balls. Using a rolling pin, roll balls out on floured board to 7 inches in diameter, about 1/4-inch thick. Place the rolled out dough onto griddle. Flip when raised bumps appear on the surface of the dough, about 1 to 2 minutes. Cook second side until it turns golden. Do not cook too long or flatbread will become brittle. Cover flatbread with a towel up to 20 minutes before serving.

Yield: 8 (7-inch) flatbread rounds
Tzatziki Sauce:

* 1 cup Greek yogurt
* 1 cup sour cream
* 1/2 English cucumber, chopped into 1/4-inch dice
* 1/4 cup freshly minced mint leaves
* 3 tablespoons minced garlic
* 1 tablespoon lemon juice
* 1 teaspoon salt
* 1 teaspoon freshly ground black pepper

In a medium bowl, mix all ingredients together well. Refrigerate at least 1 hour.

Yield: 2 1/2 cups
 
Sheryl- Thanks for the update. My dad recovered fairly quickly when he had his done in the spring, so I'm sure Alexis will be back to normal in no time.

Aimee- I "think" that is commen with wisdom teeth, they go up and then back down, causing the pain. It's already september, so next year will be here before you know it, I hope your able to wait.

Kathy- I'm sorry for all the stress this is causing you, I'm sure it will be fine though.

Ann- Glad your enjoying the van, I've never driven one but I'm sure it must take some getting used to. Good luck to Ron.

Laura- I'm sorry for Liam's allergies, will they test him again down the road or is this just the way it will be?

I'm sure I had more to say, but I'll stop for now. Don't know what's for dinner, but I'm sure it will involve chicken. I would really love eggplant parm now though, but that wouldn't go over well here.

I've never eaten at ANY of those spots - any thoughts or reviews?

I may make a few other random reservations for earlier in the week but I knew I needed to get these set 90 days out.


Tonight I'm making tacos.
 
Here it is:

MOIST AND CREAMY COCONUT CAKE

1 pkg. yellow cake mix or pudding included cake mix
1 1/2 c. milk
1/2 c. sugar
2 c. coconut
3 1/2 c. or 1 container (8 oz.) Cool Whip

Prepare cake mix as directed on package baking in 13x9 pan. Cool 15 minutes then poke holes down through cake with utility fork.
Meanwhile combine milk, sugar and 1/2 cup coconut in pan. Bring to boil; reduce heat and simmer 1 minute. Carefully spoon over warm cake. Cool completely.

Fold 1/2 cup of the coconut into whipped topping and spread over cake. Sprinkle remaining. Chill overnight. Store in refrigerator.

Thanks Maria, Laura & Vickie! It sounds like my poor girl is really really sick. Crying from stomach pain when she's not vomiting:sad1:.

Laura, I have to wonder if she'll ever build up any immune system. If you count her pre-k 3 yr, this is her 4th year in school. It just worries me so much.

It sounds kind of like the bug that hit us after our camping trip a couple of weeks ago. Jacob had stomach cramping that was really severe. He couldn't keep anything down, but luckily it was only a 12 hour bug.

I think some kids are just prone to pick up anything. Leslie is like that. If anyone has sniffles, she's bound to get it, not to mention anything else.

I hope she's feeling better now!

We've been to Boma and really liked it. Since I have allergies they have a chef come out and walk you through the buffet line and tell you what is safe for you to eat.:thumbsup2

Oh my goodness! That poor baby! No wonder she was in pain! Prayers are said, and not just for her, but for mom and for you as well. That is so scary! I'm hoping I get an update as I read along!

Aimee - Sorry about the wisdom teeth. I've had 3 come in with no problem, but the fourth is giving me trouble. It looks like I'll eventually have to have it out, and possibly one other one, as well. Good luck on waiting. I'll keep my fingers crossed that you can make it to the new year!

Last night's dinner was chicken in lime butter (yummo!) with a side of angel hair pasta tossed in olive oil, and garlic. Fresh tomatoes completed the meal.

Tonight is my kid's favorite night: mom's book club. That means pizza party in the basement for them, while the ladies discuss the book upstairs. I got some coupons for Papa Murphy's pizza in the mail, so I'm going to use a couple of those for dinner tonight.

I just baked the raspberry coconut cake and it smells heavenly. It's cooling right now, and then I'll put it all together before the meeting tonight. Next up is a caramel apple bundt cake and some cookies for the kids. In between all of that, I'm getting the house ready for company. Timothy is napping, so I've accomplished quite a bit this morning! I do still need to get to the store for a new tablecloth. Alan ruined my old one with spaghetti sauce.

Dinner tonight is a roasted chicken.....green beans & garden tomatoes.

Last night dinner was left overs but I did manage to have a dish of Trader Joe's ice cream, a scoop of chocolate & a scoop of coffee. When it melts a bit it tastes like a mocha frap! I highly recommend it!!!
 
Sheryl -- I'm so sorry to hear about Alexis. The poor kid! I am glad to hear she is out of surgery, and I hope she makes a quick recovery. You are all in my thoughts and prayers.

When Alex complains I just say "just another job well done":laughing: Also there is no minimum age for the freezer.;)

Aimee -- I hope you are able to hold off until your dental coverage starts. Your Christmas plans sound wonderful! I have only eaten at CG -- it's wonderful -- but I have heard good things about your other choices too.

I am cleaning the basement while Nola sleeps ands working on closets when she is awake. My house is :scared1::eek:. Why in Earth did I think this was a good idea!?!

At least you will not have the problem I have. When I clean the basement, I put things in the closets. When I clean the closets, I put things in the basement. I'm not sure what I would do if I cleaned both at the same time!

Liam has never had a problem with dairy allergies. It has always been eggs and shellfish.

Ann -- I hope Ron gets a good report!

They will continue testing him. The numbers did go down from two years ago, but not by much.

Liam is out golfing with my dad today, so it is just me and Caili here for dinner. I keep asking her what she wants, but she hasn't had any suggestions. I think I will go to the fish market.

Well it is golf night for Doug. Not too many nights left. It starts to get dark - well to dark to golf - around 8:15. So the amount of holes he can get in is waining. But out he and his buddies will go until he can't go or see anymore. :laughing:

So with it being just me I am having salmon tonight. Doug doesn't DO salmon. I think I will also have a nice salad and even maybe a glass of wine. Oh I am a spoiled girl. :guilty:
