The What's For Dinner Thread - August '09(recipe index in OP)

My brother has decided/agreed to take Ace. He's a sweet dog, but he does not read dog well and we had a fight yesterday that drew blood. It's just too much for us anymore. He will be a great dog owner, and I'll get to train him :laughing: He's coming to get him this Saturday.

Hey all! Just poking my head in to say HI! I work 14 hours today and I'm beat. Not sure what the troops had for dinner. I ate on the run.

Hope you can rest today, that was a very long day.

Debbie did not get the job. She had applied for the coaching position that was open at CCSU and we thought that she had a good chance.

No, it wasn't dizziness, just felt out of sorts all day.

Thanks everyone for the advice regarding our trip. I am really torn. Emma goes for her two month appointment on Friday and I have a huge list of questions. I will see what the Dr. advises. I have not mentioned our trip to my parents yet because I know they will freak at the thought of the kids going with the flu around. I am leaning toward cancelling to be honest no matter what the Dr. says. My DH is heartbroken because he really wants to take DS, and is dying to take the minivan on a roadtrip now. He said he would cancel asap if the Dr. advises against it, but you could see in his eyes it was like taking candy away from a baby. DH was also excited because he upgraded from Pop to POFQ :lmao:, so we are no longer POPpers ...he was starting to teach DS french terms. DH was also trying to workout changing our dates so I could join you girls for F&W but that did not work out. :headache:

Dinner is probably going to be burgers. I have not been to the store yet this week and we have alot to do tonight. We have to empty the two cars out and clean the garage.

Ann - I totally understand how you feel. I went through similar feelings as we were preparing for DL in June. I even had several panic attacks about it. Seriously, I was on the phone canceling, when I came to my senses. As long as your doctor is on board with it, I really think you'll be ok. It is not hard to keep a 5 month old away from other people, and to keep her hands away from the ride vehicles.

However, you have to do what is best for your peace of mind. Keep in mind, that no matter where you go, Emma is going to get exposed to all kinds of germs, and that's ok. It's how she builds up her immunity. While it's tempting to wrap them in bubble wrap, it's really not good for them. With something like H1N1, you do have to be extra vigilant, but really, it's not worth putting your life on hold for.

I hope I'm not offending you, but I'd hate to see you give up this trip that you've been planning and dreaming about for so long. With a little care, you will be just fine! Check with your doctor and follow any guidelines that he sets down and then just take a deep breath and say to yourself, "We could contract swine flu anywhere, not just at WDW!"
 
Dinner tonight will be some sort of chicken. Not sure how I'll cook it yet, but I'm sure inspiration will come to me.

Now, I'm off to re-read the index of recipes!
 


Morning Y'all,

Dinner last night was my italian beans & sausage. I haven't decided on dinner tonight. I never did get the grocery shopping done yesterday, so I'll have to do that today. I bought some funny looking squash at the farmer's market, I'll have to figure out what to do with that.

So today at work I saw raccoon tracks in the mud by the sidewalk between my trailer building and the main building. :laughing:

Ooooh...that is good to know. It rained pretty hard last night so I'm assuming the tracks are from when the mud was more wet than during the day. The heat dries it out some.

So far the only wildlife I've seen at work aside from crickets and ants is a frog that at first I thought was a little rock until it hopped out of my way.
There are snakes and alligators in the area though...

How does a city girl know what raccoon tracks look like?? You realize it could also be a nutria or possum! Be careful, he was probably running from the alligators!!;):laughing:

I only BOUGHT 4 bottles home. The current bottle count here is 26! But of course there are 2 of us here that drink wine! ;)

I am officially a :drive: minivan mom. We signed papers and will be picking up our 2009 Chrysler Town & Country on wednesday. It is so beautiful, I can't believe it is ours. I have to give my DH a ton of kudos. He got us a better car for the same monthly payment as the dodge, but a year shorter loan!!!:woohoo: He might get some extra loving for this one

Dinner tonight was the salmon and fried green tomatoes. It was a very long and tiring day today, there was soooo much whining and it wasn't all me! :rotfl: I was going to make cous cous and couldn't find it.

Dinner tomorrow night is going to be shrimp curry.

I got an appt to see a dentist tomorrow afternoon - I'm 99.9% sure it's dental. All my molars are broken so I think it was a matter of time before one of them became angry at me.

Nan, Her meltdown in church was from being tired. She slept over at her great grandfather's house Saturday night & although she made it through the night, she said she kept waking up & wanting her Mommy. :sad1: I can't say much more because I'd be really ugly but her "grandmother" (and I use the term only referring to biological) came in from MS and stayed overnight. So Chris & Rickie agreed to let her sleep over to visit with her. :sad2: And that's all I'm going to say about that! :rolleyes1

Ann, You need to do what you think is best. If you are going to go & be sick with worry, well that's not a vacation! I think Glynis' advice is excellent! I mean just going to the grocery or drug store exposes them to everything going around! I have to tell you that your DH sounds like one great Daddy! I just love that he's so excited to take Luke to WDW & that he keeps teaching him new things related to the trip! :lovestruc That's sweet. It's also funny that he changed the hotel AGAIN!!! Gotta love a man that loves Disney & wants his family to have the best! :goodvibes

He really works hard for these trips, doesn't he? I completely understand how you are feeling, but I have to agree with Glynis...you can get the flu anywhere. You aren't flying. I think that would be my biggest concern. However, like Glynis said, you have to do what is best for your peace of mind and whatever the pediatrician recommends.

We are back to afternoon skating sessions this week, so that will be influencing our menus three nights a week. We are going to have burgers tonight.

Yay, Laura typed in the recipe so I didn't have to. One note, for the chicken, you can't just wrap the chicken around the cheese, that won't work. You can either cut a pocket into the chicken and stuff the cheese inside (that's what I did), or else pound the chicken very thin and then wrap it around the cheese.

The only reason there were three people working the dish is because my DH grilled the chicken, and also we were trying to get it made quickly because we did not decide what we wanted to eat until around 2 PM and my Mom likes to eat early on Sundays. The whole thing only took about an hour.

Last night John and I went out to dinner, so no photos.

Tonight I am doing something with eggplant and tomatoes, not sure what.

Bethany, it must be nature time! You saw raccoon tracks, and this morning when we came out of our house we smelled skunk! YUCK! We had them in our yard a couple of years ago, and they must be back. No more grilling after dark for me!

Poor Alexis :sad1: Staying over is a huge deal for kids so if they are scared they need lots of hugs or they need to be able to go home.

Buddy has a vette too. It is a 69 convertible hard top and it is decrepit but it is one more treasure he will not part with. He has to get Brian to come over with his machine to move it around the yard a few times a year. It is covered with a tarp and goodness only knows what is under it :eek: Men! He would totally sympathize with Bob, the joystick may be expensive but I bet he also remembers the good old days and if he is like Buddy he remembers them differently than they really were :rotfl: and that vette is front and center of the cool dude memory ;)

Now Buddy has one more little glitch in his vette memory. We had a disagreement one night out and he made the huge mistake to ignore me and talk to another girl. This was in my younger days and I had a wicked temper back then. I asked his brother to take me home but I guess that is against the guy code so Buddy took me home. Well I was furious so when we got home I swept out of the car as smoothly as anyone can when you are practically on the ground and dramatically slammed the door, trounced to the house and shut the light in his face, threw my shoe at the door and hoped that I broke his car! I actually splintered the paint and it spiderwebbed along the whole door :guilty:. Yup....he was really :mad: at me but it took years before he ever let anyone know how that mess happened. I control my temper now and he makes sure that I am never feeling slighted when we are out.

Aimee I am so glad you found Ace a home. :scared1: On the biting part. I had a dog that would give no warning before biting. I tried medication and training but the dog bit the trainer and she asked us not to return. Finally the vet had to put the dog down because Alex was small and I was afraid she would bite him.

Thankfully it wasn't biting... which often can't be rehabilitiated. He initiates play with another dog, and sometimes the dog lets him know they don't want to play but he doesn't get it. So he keeps trying to play with the dog, who gives more warnings, and finally the other dog snaps and puts him in his place = thus, a fight. So far, none of the fights have drawn blood but they are a little scary. This time Winston bit down on Ace's leg a couple of times and it did bleed quite a bit.

You can't really get mad at Winston, because Winston warned Ace to back off and leave him alone. I just think Ace needs to be in a dog-free house. He missed that lesson on how to communicate with other dogs.


Debbie did not get the job. She had applied for the coaching position that was open at CCSU and we thought that she had a good chance. Debbie played for them for 4 years, has assisted the coach for two years and has always gotten positive feedback from the administration. She knew that she was up against stiff competition though, her experience was not as strong as some applicants. I would have thought that her ability to just step in would have weighed more heavily but it did not. She found out Friday....on their website.....that the position had been filled. :sad2: I may have been wrong but I told her that I would not be available if she was asked to come help out. .

I'm so sorry. Sounds like the perfect job for her :sad1:

Kathy we did this for both my Dad and Stepmom. We made posters with pictures from different family events and vacations, we had a slideshow/video also. We had some people read favorite memories. It was still sad but in my opinion easier.:confused3
 
Somebody asked for the chicken milanese recipe a couple of days ago. Here it is, for four servings:

4 boneless skinless chicken breasts, pounded to an even thickness

Take out three plates, and put the following items on each:
Plate one: 1 cup flour, seasoned with salt and pepper
Plate two: 2 large eggs, beaten with 1 tbsp. water
Plate three: 1.5 cups dry seasoned breadcrumbs, mixed with ½ cup freshly grated parmesean cheese

Dredge the chicken in the flour, then eggs, then crumbs, pressing the crumbs to adhere. You probably won’t use all of the flour and egg.

Heat 2 tbsp. butter and 2 tbsp. oil in non-stick skillet large enough to hold the chicken in one layer. If you don’t have a large enough pan, cook the chicken in two batches. Heat until the butter sizzles, and then put in the chicken. Cook until the crust is nicely browned and the chicken is just cooked through, about 3 minutes per side.

If needed, you can keep chicken warm in 200 degree oven for up to 15 minutes.

While the chicken is cooking, prepare the salad. Have on hand one cup of washed and dried salad greens per person.

Make a dressing of 4 tbsp. olive oil, 2 tbsp. freshly squeezed lemon juice, and salt and pepper to taste.

Shave 2 ounces parmesean cheese into large curlings. Place cheese and greens into large bowl and toss with dressing. Optional: add some chopped tomatoes or thinly sliced fennel to the greens.

Place a chicken cutlet on each person’s plate and top with the salad. Serve immediately.
 
Been to the dentist - the verdict is...... wisdom teeth. I knew some of my teeth were breaking and it was them. Now they are gross and causing me mucho pain.

Of course they found a laundry list of things I need to have done but I'm only interested in what will get rid of this pain the soonest.

I have an appt next Thurs. Now I have to figure out where to find the $1k it'll take to pay for it :rolleyes1

:laughing: I do think Becky's John would object to being a Liam Woman. :laughing: Like Beck said, the recipe was not difficult...we just split duties because we were trying to get dinner on the table. It is definitely something where you can make parts of it ahead.

Personally, this is what I would want. I have not been to one, but it is a reflection on the person's life and accomplishments, rather than a mourning of the death. If you have any good stories to share, I am sure they will have a time for people to tell them.

It was a busy day for us...farmer's market, Caili got her first official haircut (yes, she has gone almost 8 years with no one cutting her hair except me and I am terrible at haircutting! Ask Becky! ;)) and then Caili had skating. I got protests from Liam about the burger meal, but our propane lasted, and they turned out well. We also had corn on the cob.
