The What's For Dinner Thread - August '09(recipe index in OP)

buying a vehicle is like planning a vacation with my DH. As many of you know he changes a ton of times and likes to upgrade. Well today we have put the Dodge on a temporary hold for 24 hours.

I was laughing out loud at this one....:rotfl:

Hi, everyone. It's been a long day! Timothy has been running a low grade fever off and on all day long. It's made him grumpy and he wants me to hold him.

I hope the little guy is feeling better.:hug:

So today at work I saw raccoon tracks in the mud by the sidewalk between my trailer building and the main building. :laughing:

I've lived here all my life and wouldn't know a raccoon track if I saw one. You're doing good girl!
 
Tonight we are having leftover chicken, orzo and snap peas.

Ooooh...that is good to know. It rained pretty hard last night so I'm assuming the tracks are from when the mud was more wet than during the day. The heat dries it out some.

So far the only wildlife I've seen at work aside from crickets and ants is a frog that at first I thought was a little rock until it hopped out of my way. :rotfl:

There are snakes and alligators in the area though...

I ended up just making pasta with a fresh tomato sauce tonight. The kids were having too much fun playing with the neighborhood friends, so I didn't want to interrupt to drag them out for the propane and whatever other ingredients I thought I needed.

Stuffed Chicken Breast with Fresh Corn Risotto and Tomato Relish

All the elements to this are easy...there are just a few of them. We had three people assigned to different parts.

Serves 6

Chicken Marinade:

1/2 c olive oil
juice of 1 lemon
1/4 c white wine
1 tsp red pepper flakes
salt and pepper to taste

Whisk all ingredients together.

For the chicken:

6 boneless chicken breast halfs, trimmed and butterflied
6 cubes of meltable cheese
1 recipe chicken marinade
12-18 slices of bacon, blanched in boiling water for two minutes
kitchen string

Wrap the chicken around the cheese, making sure the cheese is completely covered. Put the stuffed chicken into a zip-lock bag with the prepared marinade and marinate for at least 30 minutes.

Prepare a grill to medium-hot. When ready, remove chicken from marinade and wrap with bacon. Use the kitchen string to secure the chicken packages. Grill until cooked through, approximately 15 minutes.

Fresh Corn Risotto

3 tbsp butter, plus two tbsp to finish (optional)
1 small onion, finely chopped
1 1/2 cups arborio rice
4-6 cups chicken stock
3 ears of corn, shucked and kernels removed from cob
1/2 cup fresh basil, loosely sliced
1/2 cup grated parmesan
Salt and pepper to taste

Heat the chicken stock in a saucepan...it should simmer but not boil. Melt the butter in a wide pot or risotto pan. Add the onion and saute until clear. Add the rice and stir several times to coat with the oil. Add approximately 1 cup of stock to the rice and stir, pretty constantly. As the rice absorbs the
liquid, add more stock by the ladleful and continue stirring. This process will probably take 25 minutes. Once the rice nears al dente, add the corn and another ladleful of stock. Once the rice and corn are cooked, stir in the cheese and the fresh basil and the optional butter. Season with pepper, and salt if needed. (Salt probably won't be necessary unless you use low sodium chicken stock.)

Tomato Relish

1 pint grape or other small tomatoes, cut in half
olive oil
juice from 1/2 lemon
salt and pepper
1/2 cup grated parmesan cheese
1/4 cup chopped fresh basil

Combine the tomatoes, olive oil and lemon juice in a bowl. Season with salt and pepper. Before serving, stir in the cheese and the fresh basil.

To Plate:

Put a ladleful of risotto on each plate. Top with the chicken, then top the chicken with the tomato relish. Garnish with fresh basil, if desired.

Dinner tonight was the salmon and fried green tomatoes. It was a very long and tiring day today, there was soooo much whining and it wasn't all me! :rotfl: I was going to make cous cous and couldn't find it.

Dinner tomorrow night is going to be shrimp curry.

I got an appt to see a dentist tomorrow afternoon - I'm 99.9% sure it's dental. All my molars are broken so I think it was a matter of time before one of them became angry at me.

The pain was almost non existant today but steadily got worse and now it's throbbing again :confused3

We had a good day! We went to Dallas and met up with my dad and went to Ikea. Really scored some good deals, thanks to the scratch and dent section. Then had dinner at Cheesecake Factory until rush hour traffic died down.

My brother has decided/agreed to take Ace. He's a sweet dog, but he does not read dog well and we had a fight yesterday that drew blood. It's just too much for us anymore. He will be a great dog owner, and I'll get to train him :laughing: He's coming to get him this Saturday.

He seems to be a bit better, now. Fever is down, and he's asleep. Poor tuckered out little guy!

Aimee I am so glad you found Ace a home. :scared1: On the biting part. I had a dog that would give no warning before biting. I tried medication and training but the dog bit the trainer and she asked us not to return. Finally the vet had to put the dog down because Alex was small and I was afraid she would bite him.

The farm thing isn't bad just don't grow strawberries if you aren't going to be glued to the computer.:upsidedow

Glynis I am glad the baby is a little better.

Not sure yet what dinner is. It is 46 degree and I am huddle over my coffee trying to keep warm. I'll be bbback later when I defrost.

My kids call my Highlander the SUV (Sports Utility Van) :rotfl2: The inside is designed just like a minivan and from a woman who loved her Bronco and fought tooth and nail to get the F- 350, I never thought that I would say that, but I love it! Ever since the kids teased us though, Buddy whines when he drives it.....I told him that someone will be sayin' "Will teh man in the blue SU MiniVan......" and he cringes. You know...............the manly man thing he thinks he's got going on?????? :lmao::lmao::lmao:

Laura- the "sea" bedding is not going to happen. I tried several different places and there are no twin sets in any summer, fishie, shell, dolphin, beach theme left unless I want to spend a fortune on a few weeks. I change for trhe Holidays so I'll pick it up next season if she still wants it.

Dinner was good last night, Mrs Liam's beef guide is perfect! Donny fixed the sound on my computer.....the speakers were unplugged......ooops.

Debbie did not get the job. She had applied for the coaching position that was open at CCSU and we thought that she had a good chance. Debbie played for them for 4 years, has assisted the coach for two years and has always gotten positive feedback from the administration. She knew that she was up against stiff competition though, her experience was not as strong as some applicants. I would have thought that her ability to just step in would have weighed more heavily but it did not. She found out Friday....on their website.....that the position had been filled. :sad2: I may have been wrong but I told her that I would not be available if she was asked to come help out.

I am not sure if I am cooking tonight, Buddy has an appointment after work so we'll se what time he is getting in.
