The What's For Dinner Thread - May '09(recipe index in OP)

Just swinging in quickly and will check in later,

Lauri- how are you are crowd control? It seems to me that the best thing you can do for your friend is to screen her calls and keep the news people away from her and her son. I believe that the military has help as well, perhaps someone can contact their Chaplain and he can send people to minister to the family and to get rid of the media. Prayers continuing for all of you:hug:

WFD- steak and portobella sandwiches, fries, ...formula & chicken nuggets!!!

:rotfl2:

O my friends our whole community is all upset. The news people are all over this and my friend is really a private type person. News people waiting at hospital for ?s for family and at airport as son flyies in ect. Please say a prayer she takes care of her self also it has not even been a year that she has been given a clean bill of health from breast cancer herself. Just wish I could think of more I could do to make life easier for her. You girls are the best I pray she can trust the good Lord. If you can help me think of anything more I can do for her she is the type that is always doing things for everyone else and doesn't want to be fussed over.

I'm sure just being there for her makes it easier for her but I agree with the others, maybe a meal or some type of crowd control/screening. That is the last thing she needs is to be dealing with media crap.:sad2: Remember we are all here for you.:grouphug:

Last night I was laying in bed watching tv when I saw a clip of the upcoming movie Julie and Julia it looks so cute. I immediately though of all of you. It is about a person who decides to cook every recipe from Julla Child so she can blog about it. I have always admired Julia Child she was one amazing woman.

Kathy I hope your Birthday dinner was nice and Kyle won his game.Too bad it ended up a little upside down.

I can't wait to see that movie, I adored Julia Child.:goodvibes

Last night kinda worked out good. The restaurant was packed and we were rushed, which we weren't very happy about BUT it got us out early enough that we could make it to the ballpark (all dressed up) for the final inning. I have a certain phrase I yell out to my boy when he's on the mound and the smile on his face was so awesome to see when he realized we were there. Everyone told us he pitched one of his best games (12 strikeouts) and he got the game ball!

WFD - Roast chicken, mac & cheese, cornbread stuffing, gravy & turnip greens.

When I flared last time and my mouth/throat were swollen with sores, and my colon was inflamed so I couldn't eat much, I discovered Easy Mac in the microwave containers. It's just processed cheese product, I know, but it gets really soft and doesn't taste bad (esp when you're starving). Plus easy to fix when you don't have much energy. Might be worth letting him try one of those in a pinch and see if they go down okay. I love homemade mac and cheese but real cheese seems to be thicker than the processed stuff.

Does salt bother you then too Aimee? I ask because we are having to make everything without salt because Dad said it burns him up. I think the easy mac would be a good idea but I'm worried it may be salty. But it sounds like you experience similar symptoms so if you're ok with it, then it may be fine. Any other food suggestions?

I remembered because she left quite an impression on me, she is so good with Hailey. How tough it'll be to lose that one.

It really will be hard. That girl is like my child. She even gets me a Mother's Day card each year. We've had a lot of really special young women come into our lives, but some just leave a bigger hole when they leave.

You can make a roux of equal parts butter and flour then add half and half and an American cheese blend to it. AC will melt "softer" Over cook the pasta, that will make it nice and soft, then mix the sauce in with it. Salt and pepper to taste.

Some other softer cheeses are goat cheese and Monterey Jack.

Marilyn thank you. I never considered the thickness issue with the cheese and now that you mention it, I'm sure that will be important. Thanks again.

That really is special. I'm glad you were able to do both.

Tonight I'm making a roast with mashed potatoes and gravy (and some extra potatoes to take to Dad) and baby lima beans. I love those! Afterwards, we are headed to Kenny's sister's house to have cake and ice cream for his niece's birthday. They called to invite us last night and honestly, I've been so busy, this birthday slipped up on me so I don't have time to shop for a decent gift. So I'm hoping $$$ in a card will be ok.

Hey...

Cali Grill - I called this morning to make ADR's but was told because our party is more than 13 I would have to call Cali Grill direct.

CM then gave me the wrong number so after 2 redirects I finally got thu.

Only to be told by an automated service that groups of 13 could usually be catered for but it would be between 5.30 and 6.00 pm !!

I was then asked to leave my name, number and zip code and some one would call me back in 2 to 3 days.

I did not do this because I think the time difference could be an issue.

I was also not sure about the 5.30 to 6.00 thing...kindae early !! :confused3

It did occur to me that I was callin at 7am and maybe no one was around but I have called back twice and its still an automated service.

Im sorry lassies, I did try.:sad1:

Ladies, I sent Vickie a PM with a name and number to reach one of the CM's at CG. He gave me his info in case we ever had trouble getting an ADR. I don;t know if he is still there and I have no idea how he will remember me but maybe the name and number will help

Aw, what a sweet moment that must have been! Congrats to him on pitching such a good game!

Yes, salt would hurt but I don't remember the Easy Mac being real salty. You may want to try it first to see what you think. My issue would be more with salt on it's own, not really in a food, like a cracker or pretzel.

Um, I really don't eat much when I'm real sick (thus the weight loss!). I ate mac and cheese, chicken broth, and Boost. Ensure upset my stomach for whatever reason, all milk products upset it too so I couldn't do shakes. My GI tried to get me to drink shakes since they were high calorie but I just couldn't do it. Can he tolerate milk products? My GI also got me "magic mouthwash" I believe it's called. A mixture of Benadryl, Lidocaine, and something else - I swished with it before each bite to try and numb my mouth and throat long enough to get food down. It helped a little when my sores were really bad.

Tonight we have tickets for A Chorus Line! :cool1: It's one of my favorite musicals and I've never seen it live! We are meeting my dad and taking him with us. We'll meet for dinner prior.

Vicki - Could we maybe split the party in two and you secure one and Maria could secure the other?

Hi Everyone,

Lauri -- I can't imagine what your friend and her son must be going through right now. I'm so sorry for the family.

Gretchen -- For my mac and cheese, I just melt butter, a blend of monterey jack and cheddar cheeses, milk and a tablespoon or two of Velveeta. The Velveeta helps bind the cheeses so they are smooth. I use as little as it takes. It is definitely soft, and you can control the thickness with the amount of milk you use.

Kathy -- Congratulations to Kyle! I'm glad you got to see part of the game.

Aimee -- Have fun at Chorus Line! That was the first show I saw on Broadway.

I will try to catch up better tomorrow, but I have children and a husband hovering around looking for my attention.

Dinners this weekend were very good. Yesterday we had the wild salmon with a dill/mustard sauce. I grilled it on a cedar plank, so that added to the flavor. Sides were Mom's eggplant sticks, baked sweet potatoes and sauteed zucchini and summer squash. Today we had the seafood mixed grill -- grilled tuna, swordfish and sea scallops. Becky made a delicious avocado butter to go with that. Mom made more eggplant sticks, and we also had grilled asparagus, scallion potato cakes (the only thing we didn't love), and salad greens.

Dinner is grilled chicken breasts roasted potatoes and broccoli.

Aimee Have fun tonight. I love Chorus line. I saw it a long time ago at a dinner theater.

It turned out to be a beautiful day prefect temp 79 I think we will sit on the deck later and enjoy the cool temps. Have I mentioned I love summer

Papa's Hot Wing Sauce. ( made this for lunch today for a bunch of folks )

For those who like Buffalo Wings, I make my own sauce. Here is the recipe:

2 cups of dried cayenne peppers - I have even added a few chipotles here. Really, any dried chilies will work. You choose what works.

1 cup of water

1 chopped onion

3 cloves chopped garlic

1 cup of white vinegar... or cider.... I even once used red wine vinegar

1 stick of butter

1 bottle of Louisiana Hot Sauce ( or any thing like Franks Red Hot ) 16 oz. or so.

1/2 of the juice of 1 lemon... or use the juice from a whole lemon if you like.

2 - 3 TBS of honey

1/3 cup of ketchup

Put it all in a pot and simmer for about 15 minutes. Then let it cool. Process in a food processor.

We generally dip the wings or chicken parts in, but you can apply it to the chicken when almost done cooking the chicken.... maybe with 10 minutes to go.

The sauce will keep for many months in the fridge.

Hello all. Dinner tonight was really good. I made a curried shrimp. I sauted zucchini and onions in olive oil then added the shrimp, curry paste and coconut milk. I ate it on grits. :cloud9:

Ladies, I am also behind but I am beginning to think that is how i live my life :confused3

Gretchen- I have been wondering what else your Dad may tolerate. How about a nice creamy soup or a veggie soup? You can control the sodium and add whatever liquids he likes, if he cannot digest dairy a cream stock with a roux and chicken stock instead of cream and milk.

Kady liked the Soy mac and cheese, her tummy and GI tract had lesions but she was able to eat this before she was all healed up.

I make my ground meat casseroles and dishes with ground turkey. It is much softer than ground beef so you can tailor any meatloaf or American Chop suey to his taste and still offer another dish to try to entice him to eat.

Last night we had steak, corn on the cob, salad and garlic bread. WE may end up with a grilled steak again this evening, I thawed the entire package becasue my DS thought that he and Erica may come by. Now I need to use the rest.

We ended u going to Six Flags Saturday night. Expensive to eat!!!!!!!!!!!!! I know that Disney is not cheap but the food is way better in the parks and a better buy. I remember when we first went to the Magic Kingdom, all you could buy was basket meals, no individual burgers or dogs. Buddy had to buy three baskets in order to get three burgers for lunch. Now 20 years later 6 Flags is selling basket meals, no individual sandwiches. Crazy!

This is OT on a food thread but anyone complaining about the value of a Disney ticket might want to do some comparison shopping. We saw two characters, Scooby Doo and Scrappy Doo. The games were prevelant, I had to tell Kady that we were not going to play any...average $5 per game and the pricetag for the evening would skyrocket. The landscaping was just okay but in NE our weather has not been conducive to pretty plantings. We did not see the parade this time but have seen that pitiful little thing before. No way to compare the two :sad2: Big thing, every bag is checked and it is partly to keep food out. No water, no munchies, no nothing! If you have a food allergiy you can bring something in for that one person. That is it so you need to hike back to your car if you pack a picnic. Oh yes...parking is not cheap either but we parked in a little stand for $10.00. not as long a walk and not as much money and ice cream on the way home :thumbsup2

Hi Everyone

I am back to work today. I have been working from home for 2 1/2 weeks, so this is a true shock to my system! I have enjoyed having Kady home for the most part, but she doesnt understand that when I am on a conference call, I cant chit chat about The Suite Life of Zack and Cody :lmao:

I havent been able to post, but I have been Lurking. hugs to everyone who needs it. MARIA: GET BETTER!! You dont want a drop in visit!:rotfl2:

Tonight I want to pick some blueberries, and just do nothing at home. I had to get up really early to get back on schedule and i am still tired.

Have a great day everyone!
