Zuchinni Bread

Beat Well:

3 eggs
2 cups granulated sugar
1 cup oil
1 tsp vanilla

Add:

3 cups grated zuchinni (unpeeled)
3 cups flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
Nuts and Raisins optional

Grease loaf pans and line with wax paper. Bake at 325 for 1 hour. Makes 4 small loaves or 2 medium loaves. Medium loaves may take 1 1/4 to 1 1/2 hour.
