Note: I know that there is a chance that we might miss Fantasmic. It was the only time we could fit it in.

Note 2: I also know that there is not much time between when the VIP tour ends and our V&A ADR (we will need to go back to the Poly and change.) We may have to leave the tour early and are already planning to take a taxi instead of Disney transport.

Wow!!! Lots and Lots of very special things in your itinerary. I am envious.
That said, it is WAY too much in too short a time for me. I would be exhausted and not have fun. It would start with an 11:00 Morimoto Asia ADR followed by checking out of the GF and making breakfast at Discovery Cove. This would be starting my week tired.
I would narrow down some of what you are doing so that you have time to enjoy what you do do, and save others for another trip.

I agree with Hopefully. Your travel day may make you more tired than you think, and I know an 11pm ADR would do me in. I'd skip Fantasmic and just do dinner at MA.

Monday seems like a packed day. Is Discovery Cove a must do? Or Blue Man Group? I might pick one or the other. Personally, I don't think Blue Man Group is worth going out of the way for, especially since you aren't doing either of the Universal Parks.

On Friday, I'd be afraid your Restaurant Marrakesh and Monsieur Paul ADR times are too close together. I know they sound reasonable in "real life" but we've found that we eat more at Disney meals than we do at home, and all the activity (walking, rides, shows, etc) coupled with the heat decreases our appetite a bit. Last time we did a lunch ADR at 11:30am, we weren't ready for dinner until about 7pm or so.

I think the rest look good. Sounds like a fun trip!
 
I agree with what's been said so far, you have some pretty amazing experiences but there's a lot going on! One caution I would add, as well, is that on Thursday and Friday it looks like you booked ADRS for the same park- are you planning to stay in the park the whole day? My experience has always been that after a few hours in the park I need a "break" to go back to the hotel, refresh, relax a little then I can head back out. Especially Thursday that's a LOT of time to spend out and about in Magic Kingdom so I would think about maybe building in a little down time.
 

I would also not do Blue Man Group at Universal. It's too far from Disney and in my opinion the restaurant choices aren't that great at universal. I'd bag that and stay at Disney.
 
In addition to what others have said, I would also be concerned about your Wednesday night/Thursday morning. When we do a later show, and you have La Nouba at 9 PM, we would not schedule an early morning breakfast. Overall, I agree this is too much for one trip.
