Your favourite cookbook?

I love the Allrecipes site, but it seems like there aren't many highly rated recipes on there anymore. I love to try the 5-star ones.

Among my favorites on there:
Jay's Jerk Chicken with Barbequed Pineapple and Calypso Rice and Beans YUM. An incredible meal.

Does anyone else have favorite recipes? I need something great to fix this weekend.
 
I don't have time to do really complex meals since I work FT and have a 2 1/2 year old. But I do like to try and cook healthy and fresh meals for my family at least a few nights a week.

My two favorite cookbooks are both from Pampered Chef. One is called It's Good for You and features healthier recipes and the other is called something like 30 minutes or less. I do Weight Watchers and calculated the points for both books and most of the meals are 5-8 points a serving which isn't bad for a full dinner. I also love that the recipes don't use a lot of odd ingredients and I have found them to be fairly easy and good.
 
One however, made me smile when I saw it. It's a big, thick, hardback book called "Women's Home Companion" and dates from the mid 1950s. :) Haven't actually MADE anything from there yet, except a chicken/corn casserole which was yummy. I LOVE to read through it thouogh and look at the illustrations.

These are so fun.

This cheesecake is the best I've ever had. There's an accompanying recipe for caramel sauce that puts the rightfully-famous sauce from Raglan Road to shame:

When I make this, I don't make the pralines every time, as it takes longer than I want. But it's just as good without it. The cheesecake itself is really light. Well, in texture, if not in calories.

This is a family favorite.



Bacon Chicken


6 slices bacon
1 Tbsp. butter
1 Tbsp. olive oil
5 boneless, skinless chicken breast halves
1 finely chopped onion
5 cloves garlic, minced
1/8 tsp. pepper
1/2 cup chopped parsley, if desired
1 cup shredded cheddar cheese


Cook bacon in 12" skillet until crisp, about 4-6 minutes. Crumble bacon and set aside. Pour bacon grease out of skillet, but don't wash or wipe it. Add butter and olive oil to same skillet. Saute chicken breasts in this mixture over medium heat, turning once, until chicken is cooked. Place chicken in ungreased 12x8" baking dish.

Cook onion and garlic in drippings remaining in skillet. Cook until onion is softened, then stir in pepper and cooked bacon. Spoon over chicken breasts and sprinkle with parsley and cheese. Bake at 350 degrees for 10-15 minutes until cheese is melted.
