Ok, here is one SIMILAR to mine:
2 tablespoons butter
1 or 2 bunches of leeks ... chopped ( just the whites when cooking )
2 minced gloves of garlic... more if you like
2 tablespoons flour
4 cups chicken stock
3 - 4 medium potatoes, peeled and cubed
1 tablespoon hot sauce
salt and pepper to taste
1 cup low fat milk *
Take a few TBS of the green parts of the leeks and chop up fine to sprinkle over the soup as a garnish.
Melt butter in saucepan over medium heat. Add leeks, garlic and leeks, sauté gently until soft. Stir in flour and cook for 2 minutes. Gradually stir in stock.
Add potatoes, bring to the boil, simmer gently for 30-40 minutes or until potatoes are soft. Stir in milk and seasonings.
When done, I take about 1/3 - 1/2 of it and use a "boat motor" to chop up some of the solids. I add back to the pot and stir. I'm a pepper freak so I use LOTS of black pepper.
*I some times add some heavy cream to this recipe. Some times I add some cornstarch disssolved in water if I want to thicken it.
Simple!
