Always best to have a reservation, but in the off peak times (first 10 weeks of the year, first 2 weeks of November) you can walk in until about 5:00 pm. After that, there will be a wait time, and they may not be accepting walk-ins at all. Reservations can be made up to 60 days in advance by visiting the Blue Bayou podium in the park, or by calling 714-781-DINE

At 4:00, the menu changes to dinner, and if you are seated after 4:00 the Monte Cristo sandwich is not available.

You cannot reserve a waterside table. You must request it when you check in to be seated (you can check in 15 minutes before your reservation time). If you make an 11:30 reservation (the first available reservation time) AND you show up and check in prior to your reservation time, you will get a waterside table. Otherwise, you will be quoted a wait time, and sometimes it is "right now". Sometimes it is 45 minutes to 1 hour. Just depends how many waterside requests are ahead of yours. There are only 2 tables at waterside than can accommodate parties larger than 4, so the wait times for parties larger than 4 are often lengthy.

The Jambalaya is a bit spicy, as is the gumbo. Other items are not as "Cajun inspired" so they tend to be very flavorful, but not "hot".

Well I am so glad that you asked. I called Disney dining the other day to ask this rather perplexing (To me anyway) question. And the CM stated that about two years ago this change was made. I said two years ago? This is new to me, for just last April I had used the term P.S. but was not told of this change in term. I was told that it is the same thing as a P.S. but since so many people had referred to it as a reservation, that the change in term was made. I did not ask why it had not been called that from the start, because I forgot to do so. :lmao:Oh well... I have their number in memory, so I can always easily and quickly make another call. :laughing: No, really.
