Your fave recipes using unprocessed foods?

I'm on a roll today - first a post asking about breadmakers, now I'm trying to find some great recipes using whole food. Last month, we watched the documentary "Food Inc" which talks about the food industry and we've been slowly changing the way we eat.

While I know for our family we can't 100% change to all natural and unprocessed foods, I really want to do what I can to give my family healthier meals.

I just thought I'd start a thread to see what your favorite "all natural" recipes are.....whole foods, minimally processed, etc. Also, while we're at, you can throw in school lunch ideas that your kids love. I'll be excited to read everyone's ideas!!! :)

ChefMD has some great recipes as does The Worlds Healthiest Foods. I'm trying to eat healthier and use mostly whole foods, avoiding gluten and "white" foods and sugars. All in attempt to lose weight. Althought my diet is better, it's not showing on the scales yet :-(
 
I have been cooking as much from scratch or "naturally" as I can this week... I'm starting to feel like I belong on "Little house on the Praire"...... I'm loving how everything is tasting.... but I'm exhuausted from running out to the store every 5 minutes ... since I'm embarrased to say I had very few staples in the house... just a lot of frozen prepacked junk.....

does anyone know of a website complete with menu plans and shopping list for cooking naturally?????


right now I have a peach cobbler in the oven...... meatballs in a mushroom gravy on the stove ... and rice pilaf in the rice cooker...


my biggest challenge is going to be snack foods.... my family loves poptarts... oreos.... chips ... etc....
 
I am enjoying this thread and when I get a chance I will read it all the way through. I posted this on the WISH board and I thought it would fit in here.

Pepper and Tomato Soup

3 red peppers
1/2 yellow onion
2 leeks
1 small jar of roastd red peppers drained but I think you can make your own
1 can of diced tomatoes (16 ounce) I have been using organic
2 cups of chicken stock (I use low sodium, low fat)

Clean leeks (slice off the green parts. Cut down the middle almost to the root end. Run under water to clean out the grit). Chop leeks, peppers and onion into chunks. They don't have to big small since you are going to be pureeing the soup. Spray the bottom and sides of a 2 to 3 quart pot. Put in the cut up veggies and cook until soften. YOu don't want any color on them


When the veggies are soft add the roasted red peppers, tomatoes and chicken stock. Simmer over med low heat for an hour. You could also make it in a crock pot and cook for 2 to 4 hours. When done, puree in a blender or food processor or immersion blender.

This soup is hot but I like it chilled and I take it for lunch. It is a great way to get in some extra veggies.
 

I've been reading how good cabbage is for you and thought I really didn't like it until I came across this product in Whole Foods and was able to find the recipe for it online.

Really yummy "Cabbage Crunch" slaw from Whole foods:

coarsely chopped green cabbage (1 cabbage)
(or use 1pk Dole cut up Cabbage for cole slaw)
3 or 4 chopped green onions (white and green parts)
1/4 cup toasted slivered almonds
1 or 2 tablespoons black sesame seeds (toasted)(optional)

dressing:
1/4 cup or so canola or olive oil (I like a little less)
1/4 cup or so apple cider vinegar
1 tablespoon honey (or more to taste)
kosher salt to taste

This is a really light sweet and sour flavored slaw, that looks as gorgeous as it tastes (w/ the black sesame seeds). Enjoy.
 
I also make the Whole Foods carrot soup, the old lower cal recipe before they added brown rice to theirs. It's labor intensive so you may want to make a double batch and use frozen sliced carrots as a short cut.
Low cal and delish!

Carrot-Ginger Soup
Serves 6


Ingredients
1 tbsp canola or olive oil
4 medium onions sliced
1-3" piece of fresh ginger, peeled and roughly chopped
3 cups low-sodium vegetable broth
3 cups of Orange juice
8 large carrots peeled and cut into smaller like-sized discs (or frozen discs)
Sea salt & Fresh cracked pepper to taste


Directions
1. Heat oil in a large sauce pan, add onions and cook until translucent. Add ginger and saute an additional 2 minutes.
2. Increase the heat to medium and add the carrots and broth. Simmer until the carrots are tender. Season and puree in a food processor.

I have weekly menus and complete grocery lists with printable recipes on my site. You can find a list of them here. Most of the meals are from scratch, but they are quick to make. A few meals use some processed foods, so it may not be what you're looking for.
