Filet Mignon w/ Bernaise Sauce (hoping to grill but DH will need to dig the grill out of 2 ft. of snow :) )
Garlic Potatoes in Cream (HEAVENLY!!)
Asparagus
Dinner Rolls

Beverages:
Egg nog
Cranberry Punch

Dessert:
Assorted Holiday Cookie/Candy Tray (decided to not make anything "special" - it never gets eaten after dinner, lol)

This is what I always make for Christmas. This year I had to cancel becaus the baby just got out of the hospital with pneumonia. I will post what I usually make.


Pork Roast- I marinate it for about four days before I cook it. I chop up LOTS of garlic I pour red pepper over the garlic and viniger. I cut lots of slits in the roast and stuff with the garlic, pepper, and vinigar mixture. I sprinkle "Slap Ya Mama" cajun seasoning over the roast and place it in a ziplock bag for a few days. When I am ready to cook it I heat oil in my roasting pot. I brown the roast real good. I add onions and bellpepper to the pot and brown them too. I keep adding water and cooking it out for about thirty minutes. I take the roast out of the pan and cut it up and put it back in the pot. Then I add water and ice cubes and bake it at 350 for about two hours. We eat the gravy over rice. We cajuns have to have our rice and gravy.

sauteed spinach (Blue Bayou recipe!!)

dinner rolls
tahitian treat and sparkling cider

Dessert will be gooey buyyer pumpkin cake. Yum!

Of course everyone will be stuffed on fudge, cookies and chips and dip.
