Well, the annual invite for Turkey Day has arrived from my sister and I've been assigned the veggies this year. Don't know what happened, but I almost always have the Caesar Salad assigned to me and then I bring some special veggie I'd like to try. In fact, I practiced stuffed acorn squash on Sunday to bring this year but I digress...

I need to bring three veggies that are not unique in any way, lol. My family prefers basic foods. All that comes to mind is winter squash, pearl onions and peas, and green bean casserole. Even basic veggies can be dressed up a little, can't they?

What are your three favorite vegetables at Thanksgiving Dinner? BTW, sis is making the mashed potatoes and Mom always makes the stuffing so those are covered.

I would say that green bean casserole, corn, and sweet potatoes are the basics around here. I live in a family full of purists (read: they don't like to try anything new), and those are the stand-bys that we MUST have at Thanksgiving.

Corn casserole, green beans with almonds, sweet potatoes, broccoli with cheese sauce - that's what we are having this year. At least I think that is what we are having so far. :thumbsup2

We usually do peas & brocolli.

My daughter is very picky about veggies ... she only eats three...corn, carrots & peas. She also saids potatoes count as a veggie.

IMO ceaser salad is a veggie too.

1 ) In my family, it's not Thanksgiving without the Brussel sprouts...well, maybe that's just me. Just regular steamed Brussel sprouts for us, but there are some good recipes for roasted ones.

2) I had some delicious carrots at a buffet that I have sort of recreated. Steam baby carrots in the microwave. Heat a little olive oil and garlic in a fry pan. Add the steamed carrots until they are slightly carmelized.

3) Green beans with almonds

We always have roasted root vegetables (mix of carrots, parsnips, brussels sprouts, pearl onions, red onions, and butternut squash), green beans with brown butter and toasted almonds, and turnips pureed with milk and butter and topped with crispy shallots.

I like green bean casserole, corn (everyone else pretty much insists on this one) and brussel sprouts. I know not everyone likes brussel sprouts, but I loathe sweet potatoes.

I also think spinach, asparagus, carrots, peas and onions, or some roasted root veggies would all be good.

Roasted root veggies sounds really good and will cover the necessary carrots and onions :)

Dislaney ~ what is corn casserole?

Sweet potato casserole

Green beans (NOT that nasty casserole with cream of mushroom soup and french fried onions, though)

Corn pudding...yum!

Sauteed brussel sprouts, german style green beans, and creamed spinach with pearl onions.
Oh and roasted cauliflower.

Mashed potatoes
Corn
Broccoli
Green Beans (just incase potatoes are their own catagory)

nothing fancy......

Green bean casserole
Sweet taters
mashed taters
corn of some sort
Celery stuffed with something either peanut butter or cream cheese

Roasted asparagus, roasted Brussels sprouts and roasted green beans - so much better than cooked in water. The flavor is very different and IMO better!

I make a turnip/carrot/potato mashed dish that I love. I love the green bean casserole and also usually have corn (I love the corn casserole), carrots and broccoli.

Why can't you still make your stuffed acorn squash? If I were you, I would make/bring 1 or 2 'safe' veggies, such as corn or green beans, and than bring 1 or 2 more exciting veggies, such as your stuffed acorn squash.
