If it's just about the day - I'd go. I think the long weekend sounds like a much more convenient day to dedicate to driving to and attending a wedding than a normal weekend. I love Holiday weddings - but then, my anniversary is Dec. 22nd.
However, if you have plans that are more important to you than going to her wedding, you certainly have the right to decline the invitation. An invitation is not an obligation!
Don't most couples coordinate dates with the people they want there the most - parents, siblings, etc. - and then just hope the rest are able to make it? I can't see trying to make in convenient for EVERYONE.
