Right now, I have our Saturday booked as follows:
9:15 breakfast at Cape May
over to Epcot
7:05 les chefs de France ressie
I have not booked any FP yet as we are still too far out. I do plan on booking some though

I am toying with the idea of moving our dinner up and trying to book n Illuminations cruise.... would that be too much for one day? This is our only day at Epcot

Looking for thoughts

I think it probably depends on where you're staying! If you're at one of the Epcot resorts that sounds like a lovely day. If you're elsewhere it could make for a very long day - it's not undoable though, there are plenty of places in Epcot to grab a quick rest.
 
Just wanted to let you know we ate dinner last week at Les Chefs and it was really good! It was very crowded and we had to wait 15 min or so for our 7pm ADR. Our server was friendly and attentive. Food was really good. The french onion soups are huge! Good choice for dinner, and the desserts yummy.:thumbsup2

PS.
After dinner we walked out and everyone was lined up for Illum. We walked toward the I. Gateway and stood on the bridge and had an excellent view. We were behind about two rows of people but still had a good view with no wait.
 
I think it depends on your travel party. Do you have young kids? If so, then I'd lean towards it being too much. But other than that, I think it's very doable. WS portion of EP can be a more relaxing part of WDW if you take in the shows and other opportunities to just sit and relax a bit.
 

Epcot is full of things to do and see, great shows and signature drinks in each country. Do some homework on show schedules, and schedule some nap time if you need it. The show at the American pavilion is a great 40-45 minute nap with air conditioning in dark theater with seating. Universe of energy another great air condition dark napping place. Both are great shows but just a cool down, power nap can help avoid melt down on those full days.
