If we were to stay at Animal Kingdom until closing at 7, would there be enough time to go to Epcot to see Illuminations? If not, what time should we leave Animal Kingdom?

You have more than enough time. Illuminations doesn't start until 9. Just don't forget to get your hand stamped. And if there isn't a bus going directly to Epcot, but there is one that goes to the Swan, Dolphin, BW, YC, or BC grab it. They're all a short walk from the back gate.

I think you can make that. If you have a car, please bear in mind that it takes time to get out of the AK parking lot, travel to Epcot, and get all the way to WS. That will probably take about an hour.

I think it is definitely doable. Just keep in mind that if it a really busy day, there can be a traffic delay leaving AK and getting to Epcot. If you are staying onsite, the bus system will get you there--just follow the above advice on bus travel to nearby hotels and walking to the World Showcase.

possible - but keep in mind that you can't catch a bus from AK to EPCOT. The best option is to take a bus to Beach Club (or Boardwalk, Swan, Yatch Club), then walk over to EPCOT through the International Gateway. Another alternative is to jump on the bus to AK, CSR, or CBR and then stay at the bus stop until an EPCOT bus comes around.

Why not leave AK earlier? If you get there in the morning, you'll be done by 3 or 4pm. You can then go right over to EPCOT (or Boardwalk area) where there are many more place to eat.

Also keep in mind that you'll be leaving along with everyone else in the park, many of whom may also be heading to Epcot. You may want to leave earlier to avoid the rush out of AK, and the crowd heading into Epcot. Even if you do leave at 7 I think it's still possible, if rushed.

You should have no problem it isnt that busy at AK at that time quite often we will get there at 6.30 so we can walk on a few rides and there is not a huge rush of people leaving most leave by 4 pm

A couple of people mentioned not being able to catch a bus from AK to Epcot, why not? Just wondering because I caught a bus from AK to Epcot in February, twice.
