Would someone please explain the boat routes?

WE will be staying GF and I know there is a ferry stop there, and that we can take the ferry to the MK. Where else does it stop? If we change boats, where else can we take boats to?

That launch stops at the GF, Poly and MK. You can change boats at the MK and take a boat to the WL & FW. There is another launch that operates on Bay Lake that stops at the WL, FW & the Contemp.

At the GF, you'll have access to one of the smaller water shuttles. They are a lot of fun. The boat runs from the MK, to the GF, then on to the Polynesian, and then back to MK.
Then, there is the big riverboat type ferry that runs between the TTC and MK. And you can get a boat to WL and FtW. I believe those boats can also stop at the CR as well.
Over in Epcot, you can board a Friendship boat at the International Gateway. It will take you to YC/BC, BW, S/D then on to MGM, and back again.

MK area boats:
1) MK -- GF -- Poly -- MK
2) MK -- Wilderness Lodge -- Fort Wilderness -- MK
3) MK -- TTC
4) Contemporary -- Wilderness Lodge -- Fort Wilderness

In addition, there are the FriendShip boats that go between Epcot and MGM with the Boardwalk/Epcot area resorts in-between.

There are also boats from the Port Orleans resorts, Old Key West, and Saratoga Springs resort to Downtown Disney. Within DTD, there is also a water taxi that runs between the two far sides of Marketplace and West Side.

I have heard that it takes a while to take the bus to MGM from GF. Would I be better off trying to take a couple of boats?

Not possible. The bodies of water are not connected. It doesn't take all that long to get to MGM from the GF...about 20 mins once you are on the bus, if that long.
