Worthwhile to take FP for much later times?

I'm getting ready for my first family trip to Disney. I was very uneducated about the level of planning required so at two weeks out I am just now looking at fast passes. I made up 'schedules' of what rides/attractions we wanted to see based on touring plans in the unofficial guide and easywdw plans. Of course when I went to get fast passes none are available for the times I had hoped for. Is it worthwhile to take a much later time -- for example I can't get Peter Pan for the morning but I could for 2:30. I don't have the time or energy to revamp all of the schedules so I will probably still plan on going to Peter Pan when I originally had it scheduled...so it'll be before 10:30...is it reasonable to hope that maybe going early will get me in without crazy waits anyhow...but this isn't the case at least I'd have the later fast pass so we could skip it and go back for the later time with fast pass? This example isn't real, btw...just trying to give an example to better illustrate what I'm talking about as its late and the reality is I have no clue what I'm talking about

Or, if I can't get fast passes for the times I wanted, is it NOT a good idea to take a much later time to 'wait and see'--will that somehow be a bad thing?

We are traveling with a 5 year old so we aren't trying to do a lot of the headliners like Splash Mountain or any roller coaster, really, with the exception of the seven dwarves ride, but as I can't get a fast pass for that and it was already one of the first rides we were going to try that day, I just moved it up to being the first. And for things like Anna and Elsa where waits without FASTPASS are going to be hours, we are just skipping it 100%. Interested to hear other strategies when you are trying to do all of this way later than 60 or even 30 days out...

1. Yes.
2. Only if it is very early in the morning, one of the first rides after the park opens that morning.
3. Yes.
4. But, my answer (#2) is specifically about Peter Pan, due to its extreme popularity.
5. I don't understand why you wouldn't want a FP for a desired attraction at any time that you were in the park.
6. Yup. Right after the park first opens. Directly after rope drop happens.
7. Could be. You can always check the wait times on the App.
8. Just keep checking for the FPs you want, and RE-checking for the FPs you want, and RE-checking for the FPs you want, and RE-checking for the FPs you want.
